This is the California chicken salad bowl from the “bowls” cookbook by America’s Test Kitchen.
It was one of the best meals we’ve had in the past few months, but it was not exactly the simplest thing to throw together. Sometimes grain and/or salad bowls are a lot of work due to all the different components. This one was deceptively so.
To prep, you have to saute broccoli, bake chicken, and make dressing.
The dressing was SO good! I love creamy herby dressings.
The book has a ton of different sauces and dressings in the back, so even if you don’t want the one suggested with a certain recipe, there are lots of swaps. They have vegan and gluten free options for most meals. And enhancements if you have extra time – like quick pickled things, spiced nuts and croutons, etc.
If I recall correctly, the broccoli was an optional component in this dish, but I went for it. The pistachios might have been too.
The base was spinach tossed in some of the dressing (which I obviously doubled), then the layering started.

- edamame
- pistachios
And more creamy herby dressing!
