We are SO close to being able to grill again!
We finally got our BBQ (which we picked out back in MARCH!!!) but now we are waiting to hook it up to the gas line (and neither ACE nor Home Depot have the part so we are in a holding pattern—again). Until then, it’s indoor cooking.
I was pretty content to just go without beef for the few months that our backyard remodel was slated to happen. But then it dragged on and on and ON…and Kyle was really in the mood for steak.
So I gave it a go in the dutch oven! I used our favorite (compromise) cut of meat. Which is flank steak in case you were wondering 😉
I prefer the well done parts so when I’m at the meat counter I try to choose cuts that are thicker in certain parts so that he can have his more rare and I can take the thin edge pieces. Teamwork makes the dream work!
After it was done in the cast iron, I added spinach to saute in the juices and served it on the side with some cornbread.
Is there anything more depressing that dumping a mountain of spinach in a pot and then seeing it look like barely enough for one person after a minute of cooking??
