Yes, I ate more than my arame-zing salad yesterday.
I had breakfast (Alvarado Street sprouted bread with peanut butter, banana slices, and cinnamon).
Lunch (wrap).
And dinner.
My latest batch of log seitan was in both lunch and dinner.
I used this same recipe/method but kneaded it longer, which made for a much denser log.
The lunch wrap had Alvarado Street sprouted tortilla, spinach, seitan, and a delicious avocado/hummus spread.
One (whole) avocado + one (huge) scoop of roasted red pepper hummus
One squeeze of lime juice + one dash of paprika
I spread some on the tortilla and ate the extra portion with carrots.
So you wanna be a wrap super star, live large… Who remembers Cypress Hill? Ha.
For Alphebruary day two (my B food), I decided to try some BARLEY.
I’ve never had barley that wasn’t in a soup, but Wednesday being a work day meant my barley dish had to be portable. In terms of transportation, soup isn’t ideal. It can be done, but it’s not ideal.
So some prep needed to be done. After a long brainstorming sesh, I came up with an idea that sounded good.
It involved combining barley with my faux “tuna” salad recipe.
So while the barley was cooking, I made the vegan salad.
Then I combined the two to create what is basically a vegan “tuna” salad in a bowl. In lieu of bread there’s barley. And in lieu of mercury laden fish, there’s TVP.
Ironically enough, I got to work this morning only to discover I was actually scheduled to work the night shift. There’s nothing like waking up at 4:15 in the morning for no reason… FML.
So basically, I got up way before the sun to workout, shower, make coffee, eat breakfast, drive to work, and arrive at the hospital…all before 6:30 am…only to find out I wasn’t supposed to be there until 12 hours later.
What is wrong with me lately?!?! This is the 5th ridiculous incident in the last 48 hours that is truly making me question my sanity. [Those of you who saw my tweet yesterday about discovering the tv remote in my purse at the grocery store checkout know what a mess I am]
So I guess I could have made barley soup after all.
Now I have a nice portable lunch to eat at home. I should really just go back to bed.
I have always been interested in barley and never had it either. That’s a creative way to use it! I love hummus with avocado in it! Yummy! I love avocado period though 🙂 And man that seitan log is going to last you forever! Great job figuring out so many great ways to use the LO’s 🙂
I’ve never had barley in non-soup form either. Your creation looks yummy, though. And for the record, if I stayed up for 55 hours straight, I too would lose some of my sanity. I hope you came home and went right back to bed!

I’ve been wondering for a while now whether avocado and hummus would be a good combo with some veggies in a sammie. I think I’ll have to give it a try because yours looks delish!

Yum, I’ve gotta try making my own seitan, it looks good and not too hard. The hummus wrap looks very good.
Ugh, sorry about the work mixup – frustrating. I have “off” weeks too and they’re usually related to stress and lack of sleep.

So, a few weeks ago I bought either TVP or vital wheat gluten at the bulk bin at Whole Foods, meaning to make seitan “or something” out of it lol…. and now I forgot which one it is lol so I have no idea what the heck to do! Silly me.. see, we all have our clumsy moments 🙂

I love this idea so much, and the cheesecake from the last few posts is so tempting, I would pay a lot of money for it at a restaurant! Hope your work schedule isn’t preventing you from sleeping too much. Can’t wait for the rest of your recipes!
