Banana bread bookends

First thing I did when I got up was inhale deeply.

Even though our bedroom is upstairs, the aromas from the kitchen still make their way up to us overnight.  Especially when I make bread right before bedtime.

I took a few slices of each for breakfast (and general morning snacking).

Excellent.

I don’t have photos of all my work food.  I brought pizza and other stuff.

The dough was soooo good.  Fluffy and soft.

The sauce had too much garlic.  FODMAPs fail.

The cheese was melty.  Really and truly.  It melted.

If you see teese near you, get it.  They have a few flavors – so far I’ve only tried the mozzarella.  And did I mention it melts??

I was too lazy to shred it with a cheese grater, but even the wedges I placed on the pizza got soft and when I bit them, they stretched like actual cheese.

As you can see, I was somewhat stingy with it’s application on this particular pie (the other one had a bit more).  I was worried I wouldn’t like it (or worse, my gut wouldn’t like it).  But now that I know it’s yummy and gentle on my digestive tract, I’ll be more liberal in future uses.

When I got home from work, I found this waiting for me.

Mine is the one on the right, a vegan vanilla bean cupcake from Yummy Cupcakes.

They have a separate vegan menu but what’s offered rotates daily.  They post the monthly schedule online so you can time your visits to line up with certain flavors…like Cinnamon Roll…or French Toast (4/20!!)…

There are a few locations (the Santa Monica one is dangerously close to us), but I’ve never splurged because I’m cheap.  It’s good to have a spouse who is a sweetheart and wants to spend money on you fatten you up.

I had half the cupcake, but stopped because I wanted to eat dinner more than anything else.  Such atypical behavior on my part, I hardly recognized myself.  Odd.

It took a while to settle on dinner because my taste buds were all out of whack from the sweet vanilla frosting.

I settled on more Teese cheese.  On toast.  Look how well it spread once melted!

But something was missing.  It wasn’t complete.

So I added avocado on top.

I call it open-faced mozzarella and avocado toast.  Vegan crack.

My Vital Vittles bread is now gone. 🙁

The flax seed oat bread was so thick and fluffy and hearty.  From start to finish, the loaf lasted 3 days.  All me.  And even that was me practicing major self restraint.

After dinner I had some tea, followed by a few pieces of banana bread.

    I love homemade bread – it’s my favorite! And I never know if I’ll like some vegan cheeses. Sometimes I’d rather not have any cheese (even on pizza) because some vegan cheese are naaasty. I’ll have to be on the lookout for this one!

    I made banana bread yesterday! I always tend to bake things when I get either a.) bored or b.) stressed. Teese looks magical! If I ever see it I’m buying it!

    There is simply nothing better than warm toasted bread with avocado!!! I eat this practically everyday….my bread lasts just about as long as yours 🙂

    I’ve never seen Teese sold in any of the stores around here, but I have seen it for sale online. It’s kind of expensive so I’ve never purchased it, but now that you’ve given it a thumbs up, I might just have to break down and buy some. The crap I’ve been buying lately just isn’t working for me. Where do you buy that Vittles bread? Just curious. I’m always looking for a new type of bread to try too. Apparently I’m never satisfied with the stuff I have 🙂

    I am a fan of Arnold’s Jalapeno Jack Almond Cheese, but there is casein in it so it’s not vegan. Whatever you do though, don’t bother with Arnold’s Cheddar it’s so gross.

    Glad to hear your giving the thumbs up on this vegan cheese. Most likely I’ll just skip cheese (unless its goat), because some vegan cheese tastes awful! And has funky ingredients. I know what you mean about garlic on the good ol’ digestive tract. Garlic and me are not friends, same with onions. And avocado and bread is the best thing everrrr. I love it with an egg too.
