I made these a while ago but I guess I just forgot about them.
Just like the batch of two scones I made, this recipe had a small yield. Only three biscuits, actually.
I guess they’re biscuits. They’re not as buttery though. More like baby banana bread rolls. Who knows.
I had them for breakfast, sometimes plain, sometimes with nut butter. But they’d be good with Earth Balance and jam too. That was my favorite toast topping growing up. Not butter OR jam, butter AND jam. Did anyone else do this too? Is this combo a hippie special or something everyone knows about? It makes sense. Sweet and savory are pretty awesome together.
Ok, the recipe.
Banana Bread Biscuits [vegan, gluten free, yields 3 rolls]
Ingredients:
- 1 banana, mashed
- 2 tbsp vegan butter
- 1/2 cup + 2 tbsp oat flour
- 1/2 tsp baking powder
- 2 tbsp coconut sugar
Directions:
Mix dry ingredients in one bowl (flour, baking powder, sugar) and wet ingredients in another bowl (banana, Earth Balance).
Combine until just incorporated (don’t overwork the dough).
Divide into three portions and drop onto a baking sheet that’s either greased or lined with parchment paper.
Bake for 18-20 minutes at 375 degrees F.
Notes: Feel free to use all purpose flour if you don’t care about the recipe being gluten or wheat free. Coconut oil could be used in place of vegan butter, cane sugar could be used in place of coconut sugar. Cinnamon or raisins might be a nice addition.
these look delicious! perfect sunday breakfast for a small family 🙂
I remember eating butter and jam together on toast. Yum!
ALWAYS did butter AND jam! The best!
Gosh I don’t think I’ve ever had jam on toast without butter? Maybe an Aussie thing? Jam & cheese is good too – try it 🙂
Butter AND jam is the standard, I think.
Hi Elise! Those look great. You are so creative. I might even try these one day soon.:)
Hops you are feeling good!
Thanks for sharing..now I know what to do with my one overly ripe banana thats been sitting on the counter for a week 🙂
Oh yes, I was a butter and jam girl as well! I couldn’t do just jam or just butter, it tasted weird that way! These look awesome!
Always, always had butter and jam…actually, grape jelly…on my toast! Still do both when I go out for breakfast. Love sourdough toast with butter and orange marmalade!
Neither have I (not had butter AND jam) – perhaps it IS an Aussie thing!
These look so much less intimidating than banana bread somehow…! I was always a butter and cinnamon sugar toast girl, somehow i dont have it very often now- gotta fix that 🙂
These biscuits look delicious! Now I know what to do with the single brown banana on the counter! I love the smaller batches too. With just two of us, larger recipes can be too much.
Definitely butter AND Jam!
Butter and jam is certainly the standard here in Australia! Although I can also eat them separately.
Those look yum.
can I use regular sugar?
yup. cane sugar or sucanat or regular sugar. itll all work.
It’s the same in France! Most people eat jam with butter here (except when sliming down is involved^^).

Could you substitute pumpkin puree instead of banana?
Sure?!
Just wanted to let you know that I’m making these for the third time and I love them! So easy and so yummy 🙂
