I know what you’re thinking…back to back posts!? Has she hired a babysitter??
To which I reply, HA! As if I’d ever accept help! You know me better than that! [Also, babysitters during shelter in place is not happening]
No, I’m just realizing that there are certain things I have to let go of now that the world is imploding. Last year Elise would be micromanaging this summer’s activities to the minute. Evolved (slash defeated) 2020 Elise doesn’t give a [bleep] so long as the kids are happy and occupied.
Yes, it might mean more messes than my OCD/anxious self would like, but like I said – picking my battles. Or at least trying.
Clockwise from the top left: ground beef, romaine/cherry tomatoes/black beans, beanitos chips/blue corn chips, cashew ‘nacho cheese’ dip.
Which, when combined, turns into…
I added cilantro as well. And then dipped a bunch of the chips into the ‘nacho’ dip on the side.
Long ago, I bought this cashew dip from Sun & Soil and ate half of it, but froze the rest for another time. Score!
The Davis location of Sun & Soil has since closed (so sad), but the Sac location remains open and even delivers to Davis. They also have online ordering and contactless pick up, so if I ever did feel the need to venture more than a mile from the house, maybe I’d give that a go. I’m still struggling with the monetary aspect of shopping during these crazy covid times. I am being forced to use online shoppers (a la WF/amazon, imperfect foods, and farmfreshtoyou) which means I’m not really able to bargain shop like I typically do. I know we aren’t spending any money outside of groceries, so there’s really no reason I shouldn’t be splurging on food – or ordering takeout every night – but this is still an area I struggle with. And that’s all I can say about it. I’m doing my best to cope with all these changes, and going with the flow is not in my nature. Thus, baby steps is the most I can offer up.
Speaking of cashew dip– any success at recreating the tofu cashew spread at Davis Food Co-op??
this sounds like a research project I could get on board with!
I am so glad you’re back
thanks amy 🙂
