About Elise

I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet... I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time. Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.

Chocolate Pecan Pie day

Our flight landed at 6 pm, so we got home just in time for a quickie dinner before the kids totally lost their ish.  No photos, but it was random as all get out, because there was next to nada left in the fridge. I definitely had chocolate for dessert though.  Vacation Elise has two servings rather than one…and since I woke up in San Diego that morning it counts. The randomness continued the next day with this soup.  I found this leftover short rib gravy (?) and added it to the instant pot with… Read more >

San Diego seaweed

The rest of the trip after Legoland was low key…back to the pool and hot tub scene with some nap time in between.  P built a model T-rex while V slept in the other room. I ate a quarter of the kids’ sando with a chicken salad that I bought at the hotel’s “marketplace” store.   It’s also where I bought the above granola, which I had for breakfast.  Their selection of gluten free snacky goodies is amazing, but they are marked up 200% because they know suckers will pay for it.  The good news is… Read more >

Legoland

Once again, Kyle and I squeezed workouts in first thing, before setting off for the day.  Our plan was still a surprise from the kids, so they had no clue what we were up to.  First things first. Coffee. I didn’t take a picture of my “best drink ever” (known as the BDE) but it was once again a serious highlight.  I almost ordered something else but Kyle reminded me that I loved it last year so I should def get it again and I’m so glad I listened to him because he was, of… Read more >

Making the best Choice

Kyle and I woke up WAY too early that first morning of vacation (why do you think that was?? cough cough, baby girl).  Sharing a hotel room is always an adventure!  Anyway, the good news was it gave us plenty of time to work out before breakfast.  We took turns at the resort gym, although I barely got my heart rate up since I was watching Bravo on my phone more than ellipticalling. In any event, we decided to hit up the buffet because we loved it last time we were there.  It is such… Read more >

Off to San Diego

How thankful am I??  Too thankful for words. I got to spend Valley’s last day before break volunteering in her class.  They had a feast, which is her happy place. There is nothing more adorable in the world than a class of three year olds praying together in pilgrim hats. Then school got cancelled on account of the smoke and so we spent the rest of the week crafting before packing up and heading out. It’s so hard to tell from these photos but you could barely see out the windows on the drive to… Read more >
