About Elise

I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet... I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time. Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.

I was so excited as I woke up today because it was sunny and (more importantly) I knew I had a full day of football ahead of me. I just love fall so much. Kyle and I gradually made our way to the couch, enjoying a lazy start – Kyle made a fresh brew of coffee and dug into the weekend edition of the FT, while I did the crossword. The coffee didn’t disappoint, it’s a Starbucks blend (naturally) to which I added Stevia and ff vanilla creamer and lactose free skim plus. For the… Read more >

Sabado Sin Lactosa

Here is my lunch that I packed the night before. Same old sando, gummy snacks that I doubt I will eat (they don’t really look that good?) and an apple and raisins. On the way to work (did I mention it’s Saturday) I picked up a treat to get the day started off right (you guessed it, a steamy starbucks soy latte). I forgot to write about a new recipe I tried today because I cooked it for Kyle (so it is not vegan and has dairy). I made up the recipe for the most part. Ingredients:broccoligreen pepperSpanish onion4 eggs1 can condensed milkshredded 4 cheese mixPillsbury pie crust And here’s the end product…A delicious quiche with rave reviews – Kyle has already informed me that this meal is a must repeat. I love it when recipes work out the first time and I don’t even need to tweak them for the next try.

Here’s how the day started…COFFEE!!!After that, I was enjoying my day off doing a whole bunch of NADA 🙂 Then I decided to make some lunch before heading to the gym (it was 1 pm after all…). So I decided to go with a new twist on an old fav. Smart deli soy bacon, egg beaters, and ff Chobani greek yogurt all in a pita pocket! These whole wheat pitas are the cutest things! It was so good. The box for the smart deli soy bacon looks different, but it is the same thing. Here’s the… Read more >

nothingness of a day

I woke up to my alarm, but the good news is that I could roll over and turn it off because I finally had a day off today. After my run of 3 days in a row, I could hardly move today. All my joints hurt. Every muscle ached. I really just wanted to stay in bed all day. Unfortunately, that tends to mess up my sleeping schedule beyond repair, and since I don’t enjoy tossing and turning until 4 am trying to fall asleep I now have just given in to the fact that… Read more >
