I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.

I woke up to another day of ick weather. It’s so hard to get excited for the day when you know it’s going to be spent mostly indoors. But then I found a surprise PACKAGE at the door!!! What could it be…?? The wonderful people over at I.M. Healthy sent me my FAVE soynut butter, both creamy AND chocolate flavors! I LOVE this stuff!! I love Will Ferrell. After yesterday’s mega sleep in, today I was back to the same routine…I had the day off, but still woke up early. I read in bed for a bit, but soon enough, my stomach said “feed me,” so I obliged with a steamy cup of joe and toasted Ezek english muffin with Earth Balance melted and lathered on to the max. I literally was craving brekkie foods all day…so why fight it. I had today off from work (finally), so I allowed myself to sleep in and it felt great!! Normally when I work, I have to wait to take my lunch break until my patients are stable, which sometimes isn’t until well after noon, so I end up going HOURS between my AM starbucks loading and my PM lunch (hence the need for my daily odwalla bars). …is carob 🙂 I definitely went overboard with the carob today – it’s just SO good, I can’t help it. Whatever. It’s healthy, right? It’s all veggiegirl’s fault! Honestly, if I ever got my hands on a bag of carob chips (like Erin did) lord help me! Heading in to work on Monday morning was a little depressing.
