About Elise
I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet...
I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.
Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.
I couldn’t decide on a title for this post. The real title should have been “how much chocolate and dessert food can you consume in 48 hours”…but that doesn’t really roll off the tongue. So, instead I decided to post photos of all the containers I’ve managed to polish off (as if wasting food in our move is my biggest concern). More death by chocolate (vegan) cake…aka the BEST slice of heaven on Earth. Yuuuummmmmy!! And this was only half way through (the original slice was about the size of a brick). And for those… Read more >

Inspired by my girl K’s creamy smooth hummus, I decided to take a second stab at making my own hummus. I have tried this before, and the result was too healthy tasting. So this time I decided to up the fat. That’s the ticket!!! Into the blender: 1 can of chickpeas (the big one) 3/4 cup of extra virgin olive oil 1/4 cup plain soy milk 5 shakes of sesame seeds and salt (to taste) OMG. The creamy texture was SO good. If I could have licked the inside of the blender, I would have…I… Read more >

I apologize for being away (I missed you all, even if you didn’t notice I was gone, haha). These past few days have been insane. I can’t even begin to try to condense it into a blog-worthy Cliff’s notes version. So… (a) I was working a LOT – gotta get the cash flow to pay those billz, yo! (b) A patient stroked out RIGHT before I was supposed to head out on my lunch break (the blogger meet up, no less) – ahhhhhh! I hate to say which part of that last sentence disappointed me… Read more >

This is gonna be snappy because I’m tired and grumpy. AM: I made some java with silk and sf vanilla syrup…which I sipped while doing some mega apartment cleaning. I had an apple for a mid-morning snack. Thrilling, I know. And then the fun began…that’s right, I’m talking March Madness!!! A few quarters under way, I got lunch ready. I spread some plain greek yogurt and red pepper hummus on a whole wheat tortilla, then added in spinach, shredded carrots, and baked tofu (more from yesterday’s batch), with lots of CURRY on top. I don’t… Read more >

When I woke up, it was WAY later than I expected…obviously my alarm didn’t go off. Shoot! But then I made my way out to the living room (aka the only other room in the apartment that’s not the bedroom), and our houseguests were all still sound asleep. No worries, I figured, they are probably just jet lagged…I made my coffee and headed back into the bedroom to sip and read blogs.Stevia and silk makes the world go round. This mug is CRAZY big, so this was quite the caffeine load.(Not wanting to make too… Read more >
