About Elise

I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet... I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time. Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.

Sore and more with chickpeas

I have been a slacker!  Rather than let these photos cause my 900th computer crash fall by the wayside, how about we play a quick little game of catch (up)? Last week, vital wheat gluten met my bestie, the chickpea. I went with the tried and true (recipe from V’con) for chickpea seitan cutlets.  Can cookbooks win Pulitzers?  So simple, so genius.  I barely let them cool before taste testing them out on a piece of bread (and subsequently losing a layer of skin on the roof of my mouth).  Yum yum. The magic bullet… Read more >

Awww, shucks guys

My oh my!  You kids certainly know how to make a girl blush.  Thanks so much for all the flattering and totally unsolicited slightly invited compliments about my race – kidding!!  😉 I really enjoyed writing about the emotional side of this race.  Often times, it seems like the physical side of racing gets the spotlight, and I thought the mental aspect should take the forefront for a change.  For me, this is actually the more difficult part of running long distances, and something I am still working on (as evidenced by yesterday’s struggles). Anyways.  After… Read more >

In sickness and in health

If my relationship with running is ANY indication of my marriage skills, the future is looking bright for me and Kyle.  I was thisclose to throwing in the towel at multiple points this morning, and oddly enough, they were ALL before the race even started.  I’m not going to go into too detailed a description of the race, because most of my issues and battles were psychological in nature and BEFORE I even got to the starting corral.  I took this horrendous photo of myself to (a) show you the obscene time I was up… Read more >

Hands down

My favorite season of all, is FALL.  I just love it.  I get so excited when I feel the weather changing.  Is there anything better? 1. The sports: Fantasy football and actual football (sadly I still get my hopes up for the Bruins and the 49ers year after year…) 2. The weather: crisp without the MAJOR brrr of winter (perfect running conditions) 3. The holidays: Halloween AND my birthday 😀 4. The veggies: time to clean the cobwebs pots and pans out of the oven (woohoo for seasonal squash) Speaking of seasonal cooking…I ADORE my… Read more >

Clean Food to recoup

I called in sick today.  :(  I couldn’t help but feel that I would be doing more harm than good for my patients.  Healing hands?  Not so much.  So, rather than pass on my germies, I opted to keep my infectiousness to myself.  Hoarder!   You know I’m feeling bad when I bring out this bad boy.  My entire fist fits in this mug, I LOVE it :D  Half coffee, half leche, half froth.  Yes, the mug was SO big, the laws of mathematics didn’t even apply – it fit 3/2 in it.  Notice the… Read more >
