I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.

This weekend I relaxed more than I have in a loooooong time. I didn’t exercise. I hardly cooked. To be honest, I pretty much spent the weekend watching the Australian Open, football, and hanging out with Kyle (I did a fair amount of eating as well). If that’s not the picturesque weekend, well, shoot me. For some reason, I’m not a huge fan of Italian food. Not sure why. In my opinion, there’s just something a bit boring about pasta that prevents me from craving it very often. Growing up I always groaned when my mom made spaghetti (nevermind that it was one of my sister’s favorites). Nowadays, not much has changed with my taste buds. Kyle, on the other hand, adores pasta, especially lasagna. So once a month or so, I make a huge batch of it and freeze individual portions for him. I’ve shown them on the blog… Read more >

If you follow my tweets you probably saw that I decided to do a little overtime the other day… If you know my normal work hours (7 am – 7 pm) you may be wondering if I am an overachiever crazy… (Yes, is the short answer) But because two night nurses called in sick, there were minimal options, and ultimately I decided to stay at the hospital until midnight (when a replacement could arrive). Packed eats… You know the drill: Strawberry Pomegranate Odwalla bar, Apricot Clif bar, Stretch Island Fruit Co. strawberry fruit leather, gala apple x2, the most massive salad I have ever made, random wheat roll (stolen from el hospital) and a steamed brocc/cauli side salad. After I photographed the above pic, I decided to add some raisins to the salad.
