About Elise

I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet... I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time. Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.

Out with the old, in with the new

My latest quinoa salad was fantastic, and the best part was that it yielded way more than I expected! What’s a girl to do?  This was an everything but the kitchen sink everything in the fridge kind of salad…including a Strawberry Shortcake coloring book.  It had leftover broccoli, leftover sweet potatoes, leftover quinoa, and a new product too! Quorn Naked Chik’n Cultets do have trace amounts of egg whites, so they aren’t vegan.  But I had never seen them before and they were on sale, so why the heck not? Here they are in all… Read more >

Keen on quinoa

My titles are just oh-so-clever, aren’t they? In my previous post, I professed my love for Terry Walters and her brilliant cookbook, Clean Food. Well, as you can see, I just can’t get enough of her recipes.  And since quinoa is one of my favorite foods ever (and thanks to Costco we just bought enough to feed all of the Middle East), it was an obvious choice for dinner.  In true Elise fashion, I made several adjustments to the recipe.  Does anyone ever follow them verbatim? Based on what we had on hand, our personal… Read more >

Terry Walters can do no wrong

No seriously.  She has never let me down; not once. I love her recipes so much that her cookbook, Clean Food, was the only one that escaped a 3 month hibernation (in a So Cal storage facility).  Everything else was packed up in NYC, shipped off to a remote location in LA, and has been waiting for us to move into our new Santa Monica apartment…but I just couldn’t part with this one.  Sure, my SoniCare toothbrush I forget, but not my beloved cookbook.  Priorities people, priorities. Anyways, in an effort to expand my in-laws’… Read more >

Blackberries and apricots

When you have no job and summer fruit aplenty… I’d say it’s pie time we do some baking!  [har har har]  In this case, an apricot/blackberry crisp was on the menu. *Note: to make this recipe vegan, substitutions are indicated in parenthesis (ie exchange the butter for Earth Balance and the brown sugar for turbinado sugar).  Step 1: Wash, pit, and chop 12-15 apricots (into bite sized pieces) Step 2: Prep crumble crust (fruit topping) in separate mixing bowl 1/3 c. butter or margarine (sub Earth Balance for vegan recipe) 1/2 c. packed brown sugar… Read more >

Being an aunt is fun…

Because at the end of the day, you can give the kiddos back to the parents. Alternate title for this post: the four-time-reheated coffee. Seriously.  I don’t think I had two sips in sequence.  It all started bright and early…at 7:30 AM to be exact. We served up breakfast… …but at you can see, the kids were a bit distracted. Ernie has a tendency to do that.  I’d like to say orange skinned puppets aren’t my thing, but they must have some sort of audience… Anyways, once we cleaned up the hash browns, toast, eggs,… Read more >
