About Elise

I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet... I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time. Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.

We be Jammin’

Last time I was home, my mom taught me how to make freezer jam (in the microwave no less).  She was all done with the raspberry and apricot batches by the time I decided to document the process, but she still had the plum left to go. And so I present to you, my mom’s simple (read: fool proof) method for making freezer jam.  *Freezer jam doesn’t require sterilization, so the jars must be stored in the freezer or consumed immediately after being made.  Ingredients fruit (raspberries, plums, apricots, peaches, anything) pectin (my mom uses… Read more >

Some like it cool

Let’s play Russian pantry roulette, shall we? What do you do with the above ingredients?  Here’s my general rule of thumb: when in doubt, add more carbs! Millet to the rescue (bulk bin grains are dirt cheap after all). I chopped all the (above) veggies, including celery, carrots, water chestnuts, and raw white corn.  Once the millet cooled, I tossed in some dried cranberries and raw pepitas. Then I added in the crunch factor (aka the raw veggies). Millet and quinoa are two grains I prefer cool.  I don’t know about many others, but I’m… Read more >

Half raw-violi

The zucchini from my mom’s garden is out of control!  There’s my forearm as a reference.  Pretty ridiculous huh?  I guess her garden’s raised beds are doing the trick…no more gophers snacking on the veggies before we can get to them.  Since her produce is multiplying like the Jolie-Pitt gang, my mom’s been encouraging me to help her put them to good use.  Being the obedient daughter that I am, I got right to work.  Fresh from the vine vegetables?  You don’t have to ask me twice!  This meal is from last month (when I… Read more >

Showered with love

The other weekend I soaked up my last moments of bride-to-be glory.  My oldest and dearest friends gathered in my hometown to celebrate my upcoming nuptials. Mimosas :)  I couldn’t have felt more loved, surrounded by my friends and family.  Eat, drink, and be merry.  Check, check, and check! How amazing are those centerpieces?  They were made by one of the shower hostesses in OXO containers from my registry.  So cute and clever!! Lunch was a feast with vegan options aplenty. The spinach orzo salad was so tasty I asked for the recipe.  It’s a… Read more >

Buying the bulk

Yesterday Kyle and I joined the rest of the economically conscientious population… and became Costco members!  We are now officially adults, budgeting and meal planning like we never have before (it’s that whole unemployed thing…).  After paying $5 for a 2 oz. can of tomato paste in NYC, we were prepared to be awed by the crazy low prices.  What we weren’t prepared for was the sheer quantity that we would end up with.  I like oats, but I don’t need 10 pounds of them.  Geez.  We came away $500 poorer, but I don’t think… Read more >
