I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.

I promised a macaroon recipe and then went awol on ya! My bad. :P You can blame my patients for wearing me out… So how about some coconutty treats? After falling in love with Tropical Traditions’ coconut oil, I was delighted when they offered to hook me up with shredded coconut to sample. Now this is a beautiful sight. Yup, it’s back to le grind. 12 hour shifts require lots of tupperwared options…and as you all know by now, I’m quite the preppy prep-ster over the weekends. Glad my type-A ways inspired some of you to do the damn thang, too. Left: spinach salad with roasted veg (brussels, carrots, broccoli, delicata squash) Right: quinoa with chopped pear, raisins, cinnamon & PB dressing (PB flour and almond milk) It’s a fairly simple dish, but dang am I obsessed. This weekend went by way too quickly. I played catch up the whole time, and it’s already over! :( All I do is make massive bulk meals for the week. Prep prep prep. The weatherman doesn’t know it’s November, but I’m certainly not going to be the one to break the news… I went to the beach this weekend – take that New York. So after coffee x3, I had a pear & dried cranberry breakfast with my agave nectar & cinnamon on top. Not too complex of a dressing, but pretty good if I do say so myself. I had an apple too.
