I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.
Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.
My second night shift would have been fine had I slept longer than 2 hours before starting it. At least it was a learning experience…I now have a better idea of how to approach a schedule change. I had coffee before starting the shift, and was doing fine until 1 am rolled around. I am ALL out of sorts. Yesterday (?) I went to bed around noon thinking I’d sleep til 5 and then get ready to head back in to work. How’d that work out?? Yeah. Not so much. I ended up watching the latest episode of Glee (check out the creepy scene I paused it on) after tossing and turning in bed. Happy Hanukkah peeps! I’m actually a gentile myself, but the hospital I used to work at in NYC was a Jewish hospital, so I’m totally down with Judaism. Lightlife’s Smart Bacon is both vegan and kosher, FYI. Just sayin’ It’s also salty as all hell, which is not great for blood pressure, but makes for one tasty a$$ dish. Bad cardiac nurse. True story: I used to really like tuna salad. It was actually one of the only meat sammies that had a regular rotation in my school lunches. Oddly enough, I haven’t missed it at all since veganizing my life. However, that probably has to do with the fact that I have always been creeped out by mayonnaise. Nasoya’s Nayonaise is a nice alternative that is not only vegan but tastes nothing like real mayo. Great for people like me who have no interest in an imitation of the creamy white ick. Making cornbread from scratch isn’t that complicated, but when you have Trader Joe’s cornbread mix on hand, why add extra steps. It’s ridiculously simple – calling for nothing more than eggs, oil, and milk. I made it dairy-free by subbing out the milk, but I did use an egg, so it’s not vegan.
