About Elise

I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet... I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time. Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.

What’s in a name?

I created a recipe today.  I’m not sure how to describe it, so I’ll just show you a photo (or twenty). “The unintentional cheesecake” was the alternate name for this beaut.  It’s vegan.  It’s delicious.  It’s dessert.  What more do you want to know?  Perhaps how to make it?  Okay.  Triple Coconut Dessert Ingredients: Crust 9 graham crackers, crushed 1/2 cup melted vegan butter (ie Earth Balance) Filling 2 cups coconut flour 1/2 cup NuNatural’s stevia baking blend* 1 tsp baking powder 1 tsp arrowroot (or cornstarch) 1 pear, chopped 1 tbsp agave 2 1/2… Read more >

Food and packers and bears, oh my!

Just as I expected, you guys had such thoughtful responses to The Cove.  It’s hard to not react with outrage, disgust, and horror when you find out such hideous things are going on in secret.  It makes me want to take action immediately.  Or at the very least do my part to help spread the word. So there you have it.  Please see this film. As for Sunday.  The post title pretty much sums it up. Breakfast didn’t really exist since I slept in so late.  I made this bowl of oats just before the… Read more >

Lucky peas

Isn’t there some good luck thing with black eyed peas and the new year?  I swear I recall some tradition of the sort.  It’s still January, so I think this recipe counts. [Edited to add: I just looked this up to confirm that eating black eyed peas on New Year’s Day is in fact a good luck tradition, as they are supposed to bring prosperity] Better late than never right? I’ve always had a weird fascination with black eyed peas.  The black and white thing is creepy to me.  Don’t they look evil?  There’s a… Read more >

Sweet tooth cravings

This weather is truly fantastic, I’m so glad I don’t work again for a few days.  Thursday was a pretty exciting work day thanks to my patient with blood glucose levels vacillating between 480 and 37.  The twelve hours flew by so quickly I hardly found time to eat everything I packed.   Kinda in love with these organic dried mangos.  I used to snack on them all the time, but then I forgot about them.  My sweet tooth is very much into dried fruit, and even though the mango looks like raw cattle hide,… Read more >

Cach Dung Rice Noodles

How cute is this package?! I have no clue what it says, but dang if it isn’t adorable.  I’m guessing those (not at all Asian) people are doing something in the rice fields…that results in the production of these tasty rice noodles.  Nothing like a nice little tale on your pasta. It’s weird how the rice noodles are both pliable and crunchy when dried.  It seems like they should be stale.  Don’t worry, though.  This story has a happy ending… See?  Yummy.  🙂 Yesterday’s dinner was inspired by Lynn’s recent peanutty noodle dish, only it… Read more >
