I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.

When I get behind in blogging, I tend to get overwhelmed and as a result meals fall into the undocumented abyss. Sometimes I’m able to catch up, but sometimes I have to simply cut my losses and move on. I never want emptying my camera to feel like a chore, so I apologize. I really love seitan and because it’s so simple to make I really have no excuse for not doing so more often. I spend so much cashola on the prepared kinds at Whole Foods. That’s not okay. Especially because I just dropped a thou$and smackers on flights to Spain and Paris (and there may be some car damage repairs in my poor little Civic’s future, too). My second night shift came and went without incident. It was pretty much a dream 12 hours. I staggered my way to the parking garage and arrived home just before 8 am to pass the car off to my better half (as in, the half that doesn’t crash the car). That would be the night shift. Oy. Why do they all go crazy when the sun sets? Why?!? That’s my attempt at taking a picture of the full moon. Mighty fine camera skills right thurr. Is it just me, or does my coffee froth look like a person running? I could be going crazy. It’s entirely possible. It’s actually the more likely scenario.
