Squeezing in the last of summer

Ok so this was the easiest and best grain bowl. I have to share so you can make this before summer produce is gone forever. The star of the show was the Galbani fresh mozzarella marinated with herbs and spices. You need the one with the marinade because it’s basically what I used as dressing (plus some red wine vinegar). Instant pot meat

Remember the other day when I posted about having leftover shredded chicken? That’s because I prepped SEVEN in the instant pot previously. Talk about getting on top of it! This allowed me to set aside two breasts for later and use the other five for two meals that week. What I did was make curry chicken salad, with mayo, celery, curry powder, salt and pepper. Your new favorite lentil dish

If you’re looking for a new lentil recipe, this butternut squash with lentils and feta is IT. Both kids LOVED it and begged me to make it again stat. I also thought it was stellar and was wishing I had made double the amount. It makes a good side dish, but it could easily be a main on it’s own. Hi! It’s October

I just uploaded 225 photos from my camera onto the computer. So now what are the chances I ever get around to doing anything with them on the blog?!? Covered in ash

Another week of corona misery is creeping by.  How are you all surviving? We finally got a chance to breathe (literally and figuratively), but then BOOM another fire broke out (a few actually…) and now our new backyard patio is covered in ash and you can’t even see the sky.  It’s an orange brown haze that seems like the start of the apocalypse.
