Choose your own adventure curry

Tomato coconut curry anyone? If you have a moderately well stocked pantry/freezer, you probably don’t even need to go shopping to make this. Pantry items:-olive oil-canned coconut milk-canned tomatoes-curry powder-rice-canned chickpeas (optional) Freezer items:-frozen veggies (peas, zucchini, broccoli)-chicken breasts or thighs (optional) Anything else you may add is purely bonus – like onion, garlic, ginger, fresh veg. See? You could make this tonight!! First (if you have it/want it) chop a small onion, garlic, or ginger and saute in olive oil. Breakfast lunch and dinner

More bread and butter. I guess all those acai bowls in Hawaii saturated my sweet tooth because lately all I am craving in the morning is salty butter. And another farro and kale salad with all the usual suspects – feta, candied walnuts, dried cranberries, etc. Plus lemon miso dressing. And carrots on the side. And a kombucha in the afternoon. Anxiety check in

How is everyone doing? I’m writing this on Tuesday night while watching old eps of Schitt’s Creek because I know nothing is going to be sorted out tonight. I have gone through at LEAST ten different rollercoasters rides and every time I get to the end and it’s the same. No clue. So now I’m going to share Sunday’s dinner and go to bed. Breakfast lunch and dinner

We have officially been back for a week and we are basically kinda sorta adjusted. Daylight savings time didn’t do us any favors, but that’s to be expected by now. Mask and treat

Did you all have a decent Halloween? Our neighborhood was awesomely on top of it and we all texted to make sure everyone had (safe) plans to make it extra special for the kids. Since 2020 is such a dumpster fire otherwise, I really wanted the littles to have a good experience.
