About Elise

I’m a nurse. An exercise lover. A whole foods connoisseur. A health enthusiast. And I have IBS. No need to cue the sappy violin music yet... I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time. Hungry Hungry Hippie is a way for me to share my daily dealings with food, fitness, and everything in between.

Breakfast lunch and dinner

I forgot about english muffins! Man, are they good! I started the day with an ezekiel cinnamon raisin english muffin topped in miyoko’s vegan butter almost every day this week. For lunch I had a Fall themed salad made up of leftovers, with spinach, kale, roasted sweet potatoes, roasted Brussels sprouts, dried cranberries, and rosemary flavored nuts. These are so good! I had extras on the side of the salad. They are seasonal so if you see them on the shelf at TJs grab them before they run out. That happened to me last year…. Read more >

Seasonal breakfasts

We have been changing up the breakfast game more than usual lately because the kids are kinda getting sick of all the usual suspects. Parfait bowls are a good all-in-one option for me to make in advance because I can bury his dairy dose (yogurt) in yummy toppings, store it in the fridge overnight, and then it’s ready to go in the morning as soon as they are. If you think pumpkin is the ingredient of the season, then that’s fine, too. You do you, boo. But I’m allll about the butternut. The dressing was a lime vinaigrette that I made up. Lime vinaigrette Ingredients: 1/4 cup olive oil 1 tbsp lime juice 1 tbsp apple cider vinegar 2 tbsp mayonnaise 2 green onions, chopped 1/8 tsp chili powder salt and… Read more >

Taste the Nation

One of the best things about getting Hulu this summer was that we were able to watch Padma’s show Taste the Nation. We are all big Top Chef fans – we let the kids watch the most recent All Stars season with us – so of COURSE we wanted to watch Padma explore various cultures via their food and learn about their history. Such a great show for adults and kids alike. I also think exposing them like this sparks the desire to try all the things they are seeing. Which is how we came… Read more >

Trying something new

[This is an old post I just found in my drafts…oops!] For the first time in…hmm…maybe a year? I took a kid grocery shopping with me. The kids hate grocery shopping (who doesn’t) and so ever since they started school (you know, wayyyyy back in 2019 when school was in-person and I had some time to myself), I would go without them. Then covid hit and solo shopping became a requirement for a whole other reason. But a few weekends ago V made the trek with me (I never thought she’d call my bluff when… Read more >
