Who likes breakfast for dinner???
Ok, more like who doesn’t like breakfast for dinner?
It’s a classic! Especially when you are running behind and can’t get your sh!t together in time to make a real meal.
I know for a fact my family does not mind one bit having am eats in the pm, and I have to say, I’m an even bigger fan because I never want savory things in the morning so I’m happy to have the chance to enjoy them at night.
I pulled some fridge scraps out for both the scrambled eggs and the potato hash.
The scramble had soy chorizo and greens from the garden.
The hash had potatoes and bell peppers which I sautéed in olive oil with garlic powder, onion powder, salt and pepper.
I also roasted kabocha squash.
The kids had canned peaches too because I had a can in the pantry and who knows. It’s 2020. My kids were so confused by the syrupy fruit, but definitely enjoyed it.
My favorite part was the squash. DUH.
But I also really enjoyed the egg and chorizo scramble a lot! Far more than I thought I would.
Oh, and not to totally confuse matters, but I also served bacon alongside the soy chorizo for the rest of the fam. Because we are a family of plant eaters slash meat lovers.
