A long time ago I read some random statistic about people who don’t get enough sleep overeating. Anecdotally that has been 100% true for me this past week. I don’t know if it’s an emotional thing or hormonal thing or what, but I’m drained from being up all night with P doing nebulizer treatments and whatnot. Considering that, I actually have very few food photos.
I made tuna salad and paired it with carrots and Jillz crackers, but once the tuna salad was gone I managed to eat all of the rest of the crackers with some sheep milk cheese.
And then I ate this bag of Rhythm Superfoods kale chips later. Nugget has been out of the original which is my preferred flavor, but this was actually really good! I don’t like the nacho one, for the record.
Who knows what else I ate this day or the day before or or the next that I didn’t take pictures of. Sometimes ignorance is bliss. The pantry stash of nuts and trail mix is taking a hit, that’s for sure.
I made another saute thing for dinner. Once again relying on our CSA for the produce and our freezer for the rest.
It’s hard to tell here, but this is the carinata kale I showed last week. It’s deep purple on one side and green on the other.
Once sautéed with broccoli it totally wilted down.
I tossed it all with sun dried tomatoes and their seasoned oil before adding gnocchi.
I actually had double the amount shown despite not even being that hungry.
I’m 99.9% sure I had dessert, but I don’t have a pic.
The next day I got to work on some food prep. I love spending time in the kitchen and it makes it more likely that I’ll turn to healthy things when I am in a frazzled state. It’s one thing to overeat crap, but it’s another thing to overeat roasted veggies and carrots. I don’t even think you CAN overeat veggies…
I gave turkey bacon a try! It’s good! I usually just pick whatever is on sale and doesn’t have icky ingreds, which happened to be this sugar free bacon by Garrett Valley. And it was good! Maybe even better than pork bacon? I made bacon wrapped dates with it for lunch salads and snacks.
It’s like my vegan Winter salad, only instead of avo and dried cranberries, I made it un-vegan with bacon and dates.
And then after lunch, right back to it!
We’ve been eating quick bread and oatmeal on rotation for a few weeks straight and I decided it was time to mix things up. Still making my everyday granola.
It was slightly more clumpy than usual this time because I ran out of maple syrup and had to use part honey for the rest.
This sheet pan dinner was straight out of Skinnytaste’s One and Done cookbook, which I got for my birthday but hadn’t cracked open yet.
It was incredibly easy and soooo delish. The glazed sauce on the thighs was made with dijon mustard, tamari and maple syrup (which is why I didn’t have enough left for the granola).
We all wanted more, though, so next time I would one and a half or double the recipe.
I’m excited to try more things from the cookbook though. It’s one of the few sources I have for air fryer recipes, and I love the all in one nature of the cookbook. it’s perfect for families with active schedules.

I’m actually really glad I had that chocolate, too, since I was up sooo many times in the night. I had told myself that if P slept through the night without any coughing fits, I’d go to body back in the morning. Sundays are drop in and now that I’m a coach I don’t have to register in advance so I can basically make a game time decision…but he didn’t sleep through the night. In fact, we were up for hours on end, multiple times, throughout the night. I watched the weather outside, and normally the rainy, gloomy skies make me want to skip workouts altogether (ESPECIALLY outdoor ones), but by this point I was delirious and stir crazy and kinda out of my mind. I knew time away from my family was the best thing I could do for myself so I sucked it up and went. You know things are going to be a little off when your 6:45 am alarm is unnecessary, but that’s life. At least Kyle is home (I let him sleep through the nights so he can be a whole person and more help during the day)! It’s like I have a newborn again with all these night time wake ups.
