I don’t want you to think Kyle and I are crazy stalkers, but we are both very much in love with Katie’s cute little family. And texts like the above are not uncommon. I mean seriously, how can you not melt??
Vegetable juice and french fries cancel each other out right? I mean the fries were from Whole Foods…that’s gotta count for something.
Kyle wanted me to take a photo of his breakfast last weekend. So here it is.

Juicing has become a daily thing. I got this ebook and am loving it. There could be a giveaway in the works…so stay tuned.
My favorite combo is anything with carrots and apples. And ginger.
I need to get more crafty with the pulp. So far I’m just throwing it in stir frys and casseroles.
Wish I could tell you more about this. Home-made vegan meatballs. Amazing.
I wish they sold these in big bags. Maybe they do and I just haven’t found them. Maybe that’s a good thing. Thanks for the portion control home free. I guess.
I finally bought an immersion blender. I don’t know what took me so long but it’s freakin’ awesome. Now I can make chunky veggies into pureed yum in the crock-pot. No extra blender/food processor transfer required. Oh and it came with several useful attachments – like a whisk and a mini food chopper.
Here’s a nice little breakfast I made using leftover carrot pulp. Maybe I’ll share the “recipe” later (it’s not really a recipe).

The Vegan cafe I have volunteered at used the pulp for crackers – they were delicious!
Ooh! Sneaky secrets and surprises! What is also a surprise is that I never got out of my pumpkin phase from last fall. I still use it all the time in my oats. Perhaps I’m ahead of the curve…or totally OCD and stuck on pumpkin.

I just love seeing what you eat. It inspires me so much. I am glad to see you are incorporating the pulp from juicing into your food. I want to juice but I am worried about it. I suffer from multiple nutritional deficiences- and also most likely leaky gut- from years of PPI use. I stopped them this past Jan and lost 33 pounds so far, which is great. I now take digestive enzymes and B12 shots and liquid D, but my levels aren’t climbing as fast as they should. And I guess I am just worried about changing too much too soon. It sounds kind of dumb now that I have said it so maybe I need to just take the plunge.

yay immersion blender! i use mine ALL the time! it’s so much easier than the messy transfer-to-blender routine! And i LOVE carrot juice too!

hey I have the same juicer, found mine at the recycling center one day, someone had left it there practically brand new and very clean like it had never been used, score! However I have a hard time with juices, no matter what combo I try they make me gag and I can never finish them. Am I alone in this reaction?

that caramel cup – this is crazy but I had one of those in sunflower seed butter that I was sent and brought it with me as an airplane snack – it was great!
