I woke up wanting oats with almond butter. Problem: no almond butter in the pantry. But I wasn’t willing to entertain any other breakfast ideas. So I set to work.
Dry roasting almonds until they started to smell…toasty.
I think it was ~10-25 minutes at 375 degrees. No oil. Nada. Just nuts in the pan.
They took a long time to cool. Too long.
I got impatient and tossed them in the food processor even though they were still warm.
And then left them to process. From powdery to chunky to creamy smooth butter.

[I added maple syrup and salt to the almond butter]
From start to finish it probably took an hour, with the roasting, buttering, oat cooking, and cleaning. Yes, of course I cleaned up the whole kitchen (including the food processor) before I sat down to eat breakfast. I’m OCD. And I don’t like messes or disorder. Except when it comes to my breakfast bowls.
In the end, I got exactly what I was craving.
And now I have a jar of sweet roasted almond butter…it probably won’t last longer than a week.
Because I have already made a real dent in it and it’s only been 2 days.
One of my goals is to make my own almond butter after I finish the jar I have now. I can’t believe how easy it looks!
I never wait for my almonds to cool before I make my almond butter. Is that bad???
I can’t believe how simple this is! I must try this soon. I have been trying to move away from peanut butter lately and this would be such an easy way to do so.
That’s me and hummus lately! A whole jar pretty much eaten! That is some dedication for breakfast. When I am hungry I am HUNGRY I can’t wait an hour! Impressed with the determination. I may have to make homemade nut butter soon this just seems too easy!
i’ve been known to put some serious work into one breakfast – lately i’m just the laziest person on the block haha but i wish you would send me your giant jar of almond butter – mine is all hard on teh bottom now and no fun to spread or scoop just eat by the crumbly bit

I never seem to be able to get butter without adding some oil to my almonds when they’re in the processor. How long do you leave them in there?

oh my gosh this looks so yummy! i love making almond butter! i sometimes throw in some hazelnuts too:) and i’m the same way — i always clean the food processor before i eat — i just have to:)
Homemade almond butter makes me swoon. I need to add some maple syrup to mine next time around.

I have almond butter every morning on my yogurt- and when I run out of almonds and almond butter at the same time I want to cry.. To think I used to be obsessed with peanut butter! Now I can’t live without almond butter and make a huge batch a couple times a month.. it’s kind of crazy how much I go through!
This summer I am definitely going to get on the homemade almond butter band wagon. I can’t believe I’ve never made myself a batch before!
OMG–I do the same thing! I totally clean up the kitchen/do the dishes before I eat too. I can’t stand the mess and disorder! I think we really were separated at birth 🙂

Thanks for posting this. I really don’t like eating almonds with the skin on but also have been wanting to try almond butter for ages. Now I can blitz up all of those leftover unpeeled almonds and make my own! Great idea!
I am the exact way with cleaning up before I eat and the times I don’t I’ll seriously stop mid meal and go clean up. Oh the crazy things we do!

Homemade nut butter was a major contributor to my decision to buy a food processor a few months ago. It’s so easy and delicious!

Haha! I love that you were willing to work so hard for almond butter. I probably would have cracked down and driven to the store. But, homemade is SO much better. Mmm…
And I can totally relate with you on being OCD. Everything always has to be clean and orderly in my apartment- and I definitely clean the kitchen before I eat. But, there are way worse obsessions we could have!
agreed! i think my job has resulted in heightening my ocd tendencies – but i figure being neat and afraid of germs isnt the worst thing that could happen.
cashews are so so good…too bad they blow my budget out of the water. love cashew butter the most.

i leave it in there for-e-ver…it takes a while but i promise you dont have to add anything. just be patient and let it do its thing.
i was the same. i was a peanut butter queen and didnt really like almond butter at first…gradually i started to enjoy it more and more…now i definitely prefer it to peanut butter. funny how your taste buds can change. i used to actually hate all nuts!!

Looving almond butter lately… My favorite smoothie i am ob.sess.ed. With is: frozen blueberries, spinach, kale, almond milk, and almond butter- sooo refreshing and satisfying!

2 things – You totally made me crave almond butter so I made some and I added vanilla and it was AMAZING! My question is – whenever I make nut butters, they get really hard after they’re in the fridge. Is that normal?
dont store them in the fridge!!
i keep mine in the pantry. 🙂 its just nuts & maple syrup – both of those are pantry stable. so are nut butters! plus they never last longer than a few weeks, so theres no way they can go rancid by then.
