Let me just photo bomb you with some recent meals…
Carrots, green grapes, Mary’s Gone crackers, Redwood Hill Farm smoked cheddar goat cheese, hard boiled eggs, local smoked almonds (from the Co-op).
Very smoke-y, very yummy. Ditto goes for the almonds.

Celery with peanut butter, carrots, Redwood Hill Farm smoked cheddar goat cheese, Mary’s Gone crackers, hard boiled eggs.
Lots of snack plates, eh? I told you it’s a theme.
I really liked the Redwood Hill Farm smoked cheddar goat cheese. Highly recommend.
In an effort to try something else new, I grabbed the above goat gouda gold from the Co-op. Sadly, it doesn’t compare to the goat gouda I recently discovered at the Davis Farmer’s Market. I don’t like stinky cheese, which this was. It’s probably just too fancy for my taste buds. 😛

And continuing the themed meals I previously posted on, here’s some more overnight oat concoctions.
Artisana coconut butter (now gone, sad face), chia seeds, oats, and Udi’s GF granola.

And again.
Now the Udi’s granola is done-zo, which means my oven is getting a workout in the near future. Probably on the late night after my little dude is asleep because the temps are in the triple digits these days and turning on the oven during the day is not remotely appealing.

Monday was a big day for me.
Requiring two breakfasts.
Not really, but I did have double breakfasts because P decided to wake up at 6:30 instead of sleeping in the extra hour he usually does. He just wanted to make sure mom had extra bags under her eyes for her job interview. Yes, I had a job interview. Nailed it.
This bowl of brown sludge was overnight oats rice made with (already cooked) wild rice, chia seeds, half a banana and cocoa powder.
But since I woke up with a growling stomach, I knew I should eat again before my meeting. Hence, the second course, consisting of Van’s GF waffles with peanut butter, strawberries, and cinnamon.
My mom came over to watch P while I got my professional face on. I am so glad I wear scrubs because pantsuits are really not my thing.
My mom took me to lunch afterwards (talk about an awesome babysitter!).
Burgers and Brew is right next to the Davis farmer’s market and it always smells heavenly when I pass that corner on Wednesday evenings and/or Saturday mornings.
I got an iced tea/lemonade and my mom got a chocolate shake.
For her meal, she got the Portobello burger with a salad (tossed in balsamic vinaigrette) on the side. I got the smoked tofu burger and fries on the side.
They didn’t have a gluten free bun option, but they kindly offered to wrap it in lettuce instead. You can’t see it, but I also added on avocado. Totally delicious meal that I will definitely get again.
My mom thought she should take a photo of my last “perfect” bite.
Our lunch companion fell asleep at the very end – probably because it was hot out and he was still in his PJs.
My mom left in the afternoon and so it was back to just the two of us.
I made a quickie dinner of yukon gold potatoes topped in BBQ jackfruit and avocado.
I had the extra avocado on the side, supplemented with carrots and almonds.
I wanted dessert so I decided to bake another batch of these cookies.
But I made too many tweaks to the OG recipe and it turned out only okay.
Next time I’ll make it the way I shared before, because those were gooooood.
I still ate over half of them for dessert (okay, all but one). Moderation fail.
And now I’m off to make a pros and cons list since I was officially offered the nursing j-o-bizzle. We all know I love list making. 🙂

I’ll be sending positive thoughts to Kyle in hopes that he gets the care situation figured out quickly! I can’t even imagine how ready you and P must be for him to get home.
How do you do with the Mary crackers? I am thinking they can be a semi grain free treat. Maybe with egg salad? There is a place near me that makes an awesome one with local free range eggs. I have not had eggs in half a year but like I said earlier with me not tolerating nuts and avocado too much and this fodmap issue, I need to add them back in. I emailed you that this grain free thing is hard. I am treating quinoa as grain free and tried black since it is apparently tolerated better but I do not like it at all. I bought some white to make. I love the link you posted about the 4 r’s-I am going to get the comprehensive stool analysis since it seems like you might be doing the wrong thing unless you know what you are dealing with-probiotics vs none and other supplement choices. My dr. Would have to become a member to order the test so hopefully he is willing to do it. If not, I could get Dr. fuhrman’s office (author of eat to live and other books on plant based nutrition) but it would cost me a lot more since they do not take my insurance. My gastro dr. Did not think it was important to pin point the cause but after reading that article I think it really is.
Anyway I am signed up to go to a 5:45 am yoga class (excited, only my second class since having my son 5 months ago). I am trying to see if practicing yoga more can sub sugar as my stress reliever.
Your cookies look good, I want to make them but my hubby hates peanut butter so they would be all me but my offices loves sweets so I can always have a few and bring them in.
Btw I am glad Kyle is coming home. I know first hand how incredibly stressful that can be. Whew having a kid alone is hard!

I have found that regardless of what the pros and cons lists tell me if i listen to my gut that the right decision for me….
