Surprise gift for MEEEEE!
Ok, this has been a long time coming and after last weekend (when I used my instant pot 3 times in one day) Kyle and I decided to finally go for it.
So now I have upgraded to the 8 QUART instant pot. Meaning I can make huge batches of stuff that will last longer than 1-2 days.
My first trial run was cooking a whole chicken (which I got from our Farm Fresh to You CSA!).
Normally I would have to wedge this in and it would be a huge messy debacle trying to flip it around after searing one side and I couldn’t fit anything else in with it. Not this time!
This pot insert is huge! I love it.
I used this recipe plus instructions for the chicken. It was SO good!
We also had rice and broccoli (because we now have rice again thanks to farmfreshtoyou).
Then, with the leftovers, I made a big stew for the kids’ lunches that week.
I used all the chicken stock and bits leftover in the pot, plus onion and celery. Then I added wagon wheel pasta and dried chickpeas and let it slow cook overnight.
They were OBSESSED with this meal and I managed to stretch it to FOUR servings.
I think I may order a whole chicken every other week to keep doing this. These organic birds from Sweetwater Creek were approximately 4 lbs and cost $15, but most importantly it provided enough food for 12 servings.
What is better than warm savory soup filling your belly when times are uncertain and you need something comforting?
