You guys are HILARIOUS! I loved the guesses about my pasta’s hidden ingredients.
To back up a bit. A few days ago, I had a typical oatmeal breakfast with strawberries, raisins, and peanut butter.
But then I added Love Grown Raisin Almond Crunch Oat Clusters of Love…
All I have to say is: damn.
This is definitely their best flavor – and that’s saying a lot because I friggin’ adored their other granola flavors (especially cocoa).
I couldn’t stop. Next thing I knew, I saw the bottom of the bag. Yikes!
Needless to say, I wasn’t overly hungry for lunch. Eventually, my appetite kicked in with an overwhelming craving for salad. Kale salad specifically.
I must’ve had Gena’s recent post on my mind. My only change was subbing roasted red pepper hummus for miso in the dressing (simply because I didn’t have any).
It was outstanding. I finished the salad and used a slice of bread to mop up the extra dressing.
Naturally I helped myself to another slice with hummus. Fresh ‘n Nova hummus is now in almost all the Whole Foods in West LA, so keep your eyes peeled in your neck of the woods for this tasty brand. It’s not only vegan, but raw; and it will blow your mind.
I spent the rest of the day in the kitchen or on my bike. I’m becoming abnormally obsessed with cycling (to the point of abandoning running). It’s weird. I find the ability to cover so much ground exhilarating. I explore so much of LA in such a short amount of time.
This pasta dish was SO good that Kyle and I finished it in less than 24 hours. I’m going to have to make it again soon. It was so easy a caveman could do it. No worries, the recipe is coming. 🙂
After dinner I packed up my lunch for work and hit the sack.
Now for the mystery past recipe…
Ingredients:
- 2 cups dry pasta
- 1 can (~2 cups) chickpeas
- 1/4 cup vegan cream cheese (I used Follow Your Heart)
- 1 cup dry lentils
- 1 cup frozen peas
Directions:
Separately, cook pasta and lentils. Blend together chickpeas and vegan cream cheese. Add cheesy chickpea sauce to frozen peas in (oven safe) glassware. Add drained cooked pasta and lentils. Mix.
*Optional* Top with bread crumbs and nutritional yeast and bake in oven at 350 for 20 minutes.
So, the answer to clue #1 was pink lentils and the answer to clue #2 (as you all guessed) was chickpeas. Actually, most people said hummus, but I’ll give you credit for it. 😉
wow, this is a totally genius recipe, and i’m not even a huge fan of pasta!!! blending the chickpeas with cream cheese ? that’s practically like hummus on steroids!! and lentils and peas?? mmmm oh my goodness, what a great combo!
Amazing recipe, looks so fresh and easy and delicious! It includes all my fave ingredients, so I have to say you are a genius 🙂
And I also really like that kale salad, it looks tasty!

phew. I didn’t even guess what the mystery ingredients were because I knew I was going to be way off base. Now I’m glad I didn’t.
I was going to guess grapefruit juice (can you believe that’s the only pink thing I could think of?) and tuna…because tuna is a likely ingredient on a vegetarian blog. Ughhhh.
The recipe and breakfast look amazing. I can’t wait till I can get back into my kitchen and try your recipe.

okay lentils sounds a lot better than watermelon. but as you saw from my last post about watermelon burgers, anything is possible!
Yes! The fresh n nova hummus is really delicious. Only I can’t recommend the black olive variety. I thought it would be those delicious greek kalamata olives but its not. Its the canned black olives that kids like to stick on the tips of the fingers variety – not a fan.

ohhh love me some lentils! but what i really want to try is that love grown granola…i still haven’t had any! shame, shame on me.

And the Fresh n nova hummus, absolutely the best and I know what I am talking about. “Blow your mind” is the right thing to say, including for the black olive one, they probably changed for good stuff now. But my favorites are the thyme one. AMAZING flavor and the so called “Hot”. Not too spicy but damn, what a kick, woow and what a flavor!
I also discovered some other amazing products from the same brand fresh n nova. The Garlic spread, it says fluffy. OMG it’s to die for.. I eat that with everything. I use it as spread, dip, I cook with. Totally addicting. and magic too. a chewing gum after and the smell is gone. Then I bought their salads, Kickin’ Kale. What a flavor and check the ingredients list. all good for you. One issue though, I found them at Whole Foods only. They should go to other stores, maybe cheaper.
i agree…i can only find them at WF. they are SO good. glad you told me the hot isnt too spicy bc im a wuss and was scared to try it but i will definitely get it now that i know it wont sear my tongue off. 🙂
