Hey guys, it’s me! E’s right hand man / sous chef / official taste tester, Kyle… Oh yeah, and I’m also her hubby. (And yes, that is definitely a picture of me in a girl’s XS UCLA jersey… long story that I maybe don’t remember that well)
I decided that after a couple years of Elise asking (/harassing) me to do a guest post, her birthday this year was a great reason for me to start my guest blogging career. And, I thought, why not make it a family affair?
We (like you guys) read Elise’s blog quite a bit, and we figured it’s about time that we reciprocate. Why should we get to have all the fun? So, a few of our family members and friends offered to do a guest post so that Elise can take a little birthday break, and be on the reader’s side, for once. So, here goes…
First, let me say thanks to all you guys for reading every day! I can tell you that Elise is inspired by your enthusiasm and loyalty. She loves making new things to share with you, and she loves that there are so many people out there looking for delicious, healthy vegan meals! And, as her official taste tester (see above), I should probably thank you as well. I get to taste most of Elise’s creations, and I’m eating much better because of it
OK, now on to the good stuff. Let me show you what I cook when Elise is not stuffing my face… starting with breakfast.
Like Elise, I too am a coffee fanatic. I worked at Starbuck’s in high school and got addicted to espresso at a young age. These days, I’m having fun with our new toy, a Nestlé Dolce Gusto machine.
This morning, I had a caramel macchiato: one espresso pod + one milk pod, 30 seconds each, and voila. A nice change of pace from the drip coffee I usually drink.
Once I’m fully caffeinated, I move on to a bigger breakfast. I usually rotate between homemade breakfast burrito or omelet on a lazy morning, or fruit or a CLIF bar if I’m on the go.
Today, I opted for a breakfast scramble (/what happens when I mess up the omelet). Tomatoes, spinach, and egg whites.
+ Some toast with some homemade plum jam from Elise’s mom
+ a glass of Emergen-C on the side for my daily Vitamin C fix.
= One good looking breakfast.
With a full stomach from breakfast, I can now go about my intense, two-a-day workouts and full-body muscle training. (note: maybe slight embellishment here. In case you missed it, see me fit comfortably into the girls XS UCLA jersey, above)
Whatever. You get the point.
Now, mid-day snack: a strawberry, POM Wonderful, and vanilla yogurt smoothie.

I’ve recently cut meat out of my diet, for several reasons (but hey, I’m preaching to the choir here). A year ago (or even a couple months ago), I would have had chicken or occasionally, steak, as the centerpiece of my dinner. Going “veg” has forced me to be much more creative in my cooking, which I really enjoy. I also love how colorful dishes can be when using various types of veggies and fruits.
Recently, I’ve been obsessed with these mixed tomato baskets from Whole Foods
And, avocados are by far (pre- and post- “veg”) my favorite ingredient to put in anything. So, for dinner I whipped up a “Sloppy K” sandwich using avocados, peppers, tomatoes, and BBQ sauce.

Don’t be shy. Let it spill all over. After all, it’s a Sloppy K – the messier, the better.
Nothing washes down a Sloppy K (or any meal, really) better than an ice cold Bud Light.
Go for it. You deserve it. After all, you worked out hard today 🙂

Oh yeah, and Happy Birthday Elise!
Minus the questionable fashion choices, I loved it! Between you, me and the whole Internets, my go-to dinner 2-3 times a week is toasted Ezekiel bread with a whole smashed up avocado for an easy and delicious sandwich. However, if I had Elise living in the same house as I was, I would be sure to raid her stash of deliciousness on a regular basis…
