I have a new favorite (easy) bark recipe…
It only has TWO ingredients!!!
Chocolate? Check!
Coconut? Check?
AND PROTEIN!

I know I have been all up in the protein powder lately, but this one is THE BEST CHOCOLATE flavor. I mean it. It’s flavor is unparalleled. I have tried a lot lot lot of them, and I thought I’d tried this one before, but apparently I hadn’t because I can assure you I would not have gone to another chocolate powder if I had. If you like creamy rich chocolate that’s sweet but not fake tasting you have to try Sunwarrior’s Classic PLUS chocolate.
Then you can make this and eat it for snacks and dessert and know exactly what I’m talking about.
Here’s the “recipe”:
- 1 cup coconut oil
- 3 scoops Sunwarrior chocolate protein powder
In a large serving ware mix until no more clumps remain, then place in the fridge. I used a 3 cup glass pyrex, but any shape will do. Larger will be flatter and more bark like, smaller will be thicker and more fudge like.
It has that chalky protein powder taste but the oil balances it out and makes it creamy like dessert. I swear it’s the easiest, most yummy thing!

The snack looks good, but I have a real problem with all that oil. But, Esselstyn(Prevent and Reverse Heart Disease) writes NO oil period???
I don’t know abut NO oil. That doesn’t sit right with me. I think all macronutrients need to be represented in a balanced diet.
I used to be on board with the low fat diet as a means of heart disease prevention – especially as a cardiac RN it was the diet the ADA had us teaching patients – but I’ve had a bit of a change of heart the past few years. The facts don’t actually back it up and while there’s nothing wrong with the ADA’s guidelines, they aren’t the only answer for health. There are a million different conflicting studies and research is always ongoing so I’m hesitant to give any specific diet my vote. Everything in moderation is probably the best tactic.
That said, fat isn’t something to fear. And quality fat from trusted sources (like the coconut oil that I used in this recipe) is something I’m happy to consume in large amounts. But again, this is something that works for me. I’m a breastfeeding mama who exercises every day – so maybe not representative of the majority of the population. I also have found coconut oil is really helpful in keeping my IBS-C in check. Hope that helps!
