Kyle was gone earlier this week and look what he came home with!?
Breakfasts have been different lately. I’m really into starting the day with fruit right now and I can’t seem to get enough berries (but then I add nut butter to hold me over).
So when Kyle brought the crate home I was in heaven.
I also made chia jam.
With a bit of shaved ginger for some extra zing.
Then I baked these muffins, which are made with tapioca starch and coconut flour. I made some tweaks and although they look a little flat, they popped out of the muffin tin easily and smelled insane.
And then I made two loaves of bread. I based the recipe off of Danielle Walker’s strawberry shortcake cupcakes but made bread instead, which meant I baked it for ~45 minutes instead of the 15 called for.
Against All Grain baked goods have never let me down, so I knew I could count on this one…and even with all the tweaks I made it still worked out so well!
If you’re surrounded by an abundance of berries too, consider making either of those. Or this recipe for strawberry breakfast bars that was a runner up option.
And because I did this all in one night, you can tell I was majorly procrastinating on a bunch of other things…
School is out! Let’s get summer going!
Yummmmm! I wish G were not allergic to strawberries…I haven’t had any in way too long since we don’t buy them or order them when out etc. I didn’t realize how much I missed them til I saw this. Everything looks fantastic!!
Kyle wins for Best Homecoming Gift Ever!! Those berries look SO incredible- i would have absolutely just eaten them until my tummy ached…. great idea with the chia jam, i like using seedy berries for chia jam so you don’t really notice the chia texture. That bread and muffins look fantastic too, what a great way to make them last longer. I don’t think i have ever tried strawberries and nut butter…aside from pb and j of course. I need to do that!
