Eating like kings and queens in Star. Beverly would never let us starve. I don’t think I’ve known hunger since we walked through the front door. Not complaining! You can roll me back to the plane.
We all woke up around the same time (West Coast time) and Kyle and I traded off watching the kids to go on runs. They hardly needed us though with all the “new” toys! I broke the fast with an Udi’s GF blueberry muffin and a slab of Earth Balance, scrambled eggs, applegate bacon and a frothy almond milk coffee. Just a small plate, NOT.
P played puppy dog and V practiced walking and we were lazy and it was awesome.
But eventually we made it out. To the park!
Lunch revolved around salt and pepper crack kettle chips. I made a chicken salad with the leftovers (we had roasted chicken the night before) and avo and mustard.
After naps we went out to get V a haircut. I’d been meaning to get her ends trimmed (there’s not much else to do) for a while and then her cast situation totally stalled me. So I was itching to get her a fresh new ‘do for fall.
P fell asleep on the way there, but joined us later, and was happy to set up shop in the tractor and watch tv (!!!) while his sister got a trim.
They took off maybe a tsp of hair in total, but whatever. It was worth it for the pigtails and glitter hairspray alone.
Oh my gosh, I can’t wait for real hairstyles!!
They got balloons too.
And after posting this on IG I realized it looked a lot like a baby announcement. NOPE! People, that ship has sailed. V locked that down when she broke her leg. We out.
They switched balloons right after because my kids refuse gender norms.
Kyle forced my arm and drove me to Athleta afterwards. Bad news. I had a friends discount code burning a hole in my pocket and so I went in thinking I’d try stuff on so I’d know what to ask for for my birthday next month. Wellllll…Kyle just took over after I tried things on and now I’m going to be the most stylish person at drop off ever. EEK. The weird part was I felt NO GUILT or buyers remorse when we left the store. Usually I’d be freaking out. Maybe it’s because I haven’t gotten any new clothes in forever. Or maybe it’s because we landed in Boise and it’s suddenly COLD and I realized Fall is finally here!! Best season e v e r r r r r r.
We got home and the kids burned off steam while dinner was cooking.
Thank goodness we had some super heroes to keep us safe. With flashlights.
Kyle’s dad grilled halibut with herbs for dinner and the best sun dried tomato and caper sauce ever. It’s from the Weber Grilling Cookbook. We had corn and broccoli too and then kombucha for dessert. Much needed because potty training is going OOF. I thought we were good after the cast came off but I was wrong. I just want to get through this phase of parenting and get to the end because I know it’s happy rainbows and butterflies over there and this phase is fleeting but it is so hard right now.
Lemon Halibut with caper sauce
For the herb paste:
- 2 tbsp EVOO
- 1 tbsp finely chopped fresh Italian parsley
- 1 tsp grated lemon zest
- 1/4 tsp kosher salt
- 1/4 tsp fresh ground black pepper
- 4 halibut filets (about 6 oz each)
For the sauce:
- 2 tbsp EVOO
- 2 tbsp fresh lemon juice
- 2 tbsp finely chopped oil packed sun dried tomatoes
- 2 tbsp capers
- 1 tbsp finely chopped fresh Italian parsley
- 1/2 tsp granulated sugar
- 1/4 tsp crushed red pepper flakes
- 1/4 tsp kosher salt
I highly recommend doubling the sauce though. It’s eat-with-a-spoon good.
