My AM meals were boring and hardly worth an explanation so I’ll get them out of the way quickly.
Breakfast: Cascadian Farms’ multi grain squares + co-op bulk bins flakes & clusters cereal + nectarine + almond milk
Lunch: leftover Caprese Caesar pasta salad (I added carrots and extra iceberg lettuce to bulk it up)

And now for dinner.
We decided to do a pizza night, but we cheated a bit by using pre-made crusts. We decided to try Rustic Crust’s organic pizza crusts. One for each of us. 🙂
As per the instructions on the back, I removed the cardboard package and recycled it (it really does tell you to recycle). Preheated the oven to 450. Added toppings. And then cooked them for ~12 minutes at 325 degrees until golden brown. Easy as that!
So here’s the play by play with the toppings.
His:
- marinara sauce
- tomatoes
- onions
- mushrooms
- plain greek yogurt
- cheddar cheese
- parmesan
If you count the chunks of greek yogurt, it’s basically a triple cheese pizza.
His was definitely more stacked than mine.
Hers:
- marinara sauce
- tomatoes
- mushrooms
- frozen spinach (thawed)
- Lisanatti Foods almond mozzarella style “cheese”
How gorgeous does mine look?
The almond cheese shredded well and tasted good plain, so I had a good feeling the final product would turn out wonderful.
Into the oven they went….tick tock…12 minutes later (plus and extra 3 on broil)…and we had these beauts.
Yummm.
As you may be able to see, the almond cheese melted pretty well. However, it didn’t stay melted long. It turned back into a solid state pretty quickly so when I bit into the slices the whole topping of cheese would come off in the first bite, rather than stretch like Daiya (or real cheese).
Still, it tasted good (not very cheese-like, but good in a different way) and wasn’t as expensive as Daiya so I’m considering it a win. I still have over half the block, which will probably make it’s way to some burgers soon.
We all know I can’t quit the burgers lately.
I actually had some self control and didn’t finish the entire pizza – although I got close – I only had two slices left for my lunch the next day. :(
Kyle, on the other hand, ate like a normal human, sticking to three pieces.

Some of the onions probably could have been cooked a touch longer, but the rest were cooked to perfection.
Uno, dos, tres, and he was done.
Lucky boy has FIVE pieces as leftovers. Can you tell I’m jealous?
I can definitely see pizza night becoming a tradition. Maybe next time I’ll suck it up and splurge on Daiya cheese. I mean, my Kombucha alone cost almost the same!
OK. Minus the solidifying cheese situation, yours looks delicious. Next time go with a pesto sauce base, shredded mozzarella alternative, mushrooms, spinach and broccoli sprinkled with oregano. Or don’t. That’s just what sounds really good to me right now…
Looks fantastic! My favorite is sliced tomato, Daiya Mozzarella cheese, and fresh basil leaves (used the same way you just used your spinach, and sometimes even more!).
Just a word of caution to readers: don’t assume *all* almond cheeses are vegan. Many have casein in them, so read labels carefully!!

Okay, those look seriously delicious! I think I’m in love with all of your meals. I love Daiya, I think I should invest in that stuff sometime soon.

I wish almond cheese would melt and stay soft like Daiya does. I actually really like the flavor but the consistency can be just…weird. For the price, it’s worth putting up with though! I only splurge on Daiya on occasion which makes it THAT much more special and enjoyable. (:

this may be a silly question, but i thought you were gluten-free? as a regular reader, the past few weeks i’ve seen a lot of gluten-filled food on the blog and i am just curious as to if you can handle gluten again
I would have never thought to try greek yogurt on a pizza. Genius!
I made the mistake once! Sometimes labels that say “dairy-free” mean there is less than 2% of any dairy related ingredient in them… it’s a tricky world out there!!
Is that just regular greek yogurt? I’ve never heard of adding it to a pizza but it sounds genius(;
