I never thought I was the kind of person who liked group workouts (back when I belonged to a gym in NYC I had ZERO interest in the boot camps or group classes), but then I started stroller strides and realized maybe I was wrong. I’ve now taken almost a month off of SS due to my foot’s arch issues, which is how I came to realize how much I miss the motivation that comes with exercising with others. I can only push myself so many days of the week…but when I’m around other people, I think I try harder than I would otherwise. So when my friend (who owns a gym) dragged me to her to spin class on Saturday morning it was EXACTLY what I needed. I’ve been doing quite a bit of cycling lately because it’s one of the few exercises that doesn’t aggravate my lame foot, but spin classes are so different. I think I’ve talked about how much I love spin in the past (I went a few times on our vacation in LA and then again in SD), so it will come as no surprise that I had a BLAST in her the class. 7:30 is the perfect start time because it let’s me wake up naturally with the kids and get them all squared away while Kyle works out. Then I get to pedal my legs off for an hour and by the time I return home the day hasn’t even started.
I stopped at Sun & Soil on the way home 🙂
I split the “V for Vanilla” and the Beta Boom for breakfast, along with a VENTI decaf soy misto. Because I had a free one 🙂
Kyle took the kids to farmer’s market while I prepped.
After that it was time to get our egg dying on.
On no, wait, first it was lunch time.
I was staaaarving by the time I ate this lunch because I was waiting on the squash and nuts to finish roasting. The things you do for a vegan Winter salad, yo. WORTH. IT.

Holidays with kids get more and more fun, especially as they get older.
This was pretty much the highlight of the day. Except not because I’d already had a STELLAR spin class AND yummy juices AND solo time…AND AND AAAAND we were about to go out to dinner at Kru! Highlights reel of a day!!
The next day they got to enjoy the fruits of their labor 🙂
Sunday Funday off to a great start.
We had a double birthday party day (oof) so in order to stay sane and keep the kids’ blood sugar in check, I kept lunch real light. As in, fruit and veggies only (to be fair, the first party served sandwiches and a full lunch spread). Both parties were so well planned – really makes me feel lame because I keep things so simple for my kids’ birthdays, but they don’t seem to mind so oh well.
Piñatas, face painting, cupcake decorating, and more. Oh my!
Dinner was all ready and waiting when we got home.
Because we went out to a restaurant on St. Patrick’s Day I felt gyped sooooo I made my own Irish meal, complete with corned beef and cabbage and potatoes.
It was so easy thanks to the instant pot. I did the corned beef for 45 minutes, then added the potatoes for 5 minutes, and then steamed the cabbage for 3 minutes. And then left it to “warm” until we were ready to eat that night. Seriously hands off.

The cabbage was honestly the best part because it contrasted so well with the beef and was the perfect consistency.
My grandpa would be so proud of my Irish cooking. 😛
I had dessert for the second night in a row because this magic bar was burning a hole in the fridge.
So that’s pretty much the way to have a fantastic weekend! The birthday fun continues now with Kyle and Valley both celebrating this week!!
