The other night I pulled off dinner from start to finish in 10 minutes flat.
Now I’m fairly certain the leftovers on hand were the supporting actors that allowed this to go down, but I also think this meal could be reproduced in an almost similar time frame again (give or take a few seconds depending on my knife skills).
Fresh (and very juicy) pineapple.
Leftover quinoa + leftover steamed kale.
Teriyaki tofu
As you can see, simply dicing ingredients and tossing them together isn’t exactly rocket science, but it is tasty.
All I added to the kale (sauce-wise) was soy sauce, agave nectar, lemon juice, pineapple juice, plus salt & pepper.
Basic brilliance. To elevate the dish even more, a dash of chili pepper or some ginger and garlic might give it that extra oomph. Not that I’m complaining, I enjoy foods in their purest.

Tofu and pineapple is such a winning combination. If you bake them on the same sheet, the juice seeps into the tofu and it carmelizes…delicious!

Mmm pineapple and tofu. There is pineapple chopped up and sitting in my fridge as of half an hour ago. Damn it that there’s no tofu! This looks delish.
