I took my sweet time posting this recipe because I wanted it to be perfect. I wasnβt looking for anything fancy.
My criteria were the following:
- quick
- low on sugar
- no fake sugar
- dessert worthy
- chocolate
- substantial
In other words, I wanted something that I could whip up with ease, that would satisfy my sweet tooth, without excess sugar. However, I wanted it to be made of real ingredients so it would both hold me over and offer something nutritionally.
Perfect puddinβ (v, gf)
Ingredients:
- 7 oz. soft tofu (1/2 block)
- 1 tbsp chia seeds
- 1 tbsp maple syrup
- 3 tbsp cocoa powder
Directions:
Pulse everything together in magic bullet/food processor/whatever.
Serve.
Voila! Vegan chocolate pudding that could stand up to almost any other dessert.
*Chilling the pudding in the fridge for a while before eating is definitely advised, but not necessary.
Does anyone else associate Bill Cosby with chocolate pudding? Just me?

Elise it looks great! Smooth and perfect but I but the ‘fu makes it more ‘hearty’ so it doesnt feel like you’re eating air and actually are satisfied for awhile. YUM!

Ever made chocolate pudding with avocado? My friend Signa shared this recipe and it yummy too. One ripe avocado, 3T cocoa powder, one ripe banana, 2T honey. Whip and blend it all together in a food processor or blender. I use my little cuisinart blender. Then I sprinkle walnuts on it. Perfect!
