One Sauce, Three Ways

I have become obsessed with this sauce and I know you will too.

I’m not joking, I am putting it on every possible meal – and I’ve yet to find an ingredient it doesn’t enhance.  If that’s not enough of a teaser, I don’t know what is…

So, I’ll just cut straight to the recipe.

Creamy Dijon Cashew Sauce

*vegan, gluten-free, soy-free, no FODMAPS

  • 3/4 cup raw cashews, soaked (at least 30 minutes)
  • 1/2 cup water
  • 1/4 cup nutritional yeast
  • 1 tbsp stone ground mustard
  • 1 tbsp honey mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tsp tamari
  • 1/2 tsp garlic powder (optional – omit to make FODMAPS free)
  • salt (to taste)

Pulse all ingredients together in a blender/food processor/magic bullet.

Then serve with whatever veggies you have on hand.  Or pour over pasta.  Or dip your finger in it and suck it down.

I suggest making a double recipe, because it goes fast.

IMG_5181

First up, breakfast.  Ciabatta toast with two fried eggs and Creamy Dijon Cashew Sauce.

IMG_5188

Next up, lunch.  Rice spiral pasta with shredded seitan and Creamy Dijon Cashew Sauce.

Finally, dinner.  Casserole with tempeh, chard and Creamy Dijon Cashew Sauce.

*Meal recipes coming soon*

Until then, make this sauce and see for yourself how good it is.  Tangy.  Rich.  Perfection.  Mmmm…

    Drool!

Guess I need to pick up some cashews and some apple cider vinegar! I bet that would be great with butternut squash ravioli!

  7. Emily

Yum! I love how versatile this is. I hate when I make a sauce that only tastes good with one or two different meals- I wind up getting sick of it SO quickly.
Can’t wait to try this one!

  8. Chels R.

Wowza! I have tried cashew sauce and it is really good. I will have to try that kind! I need a bullet/food processor first!

  9. Rachel

Need to make this ASAP! Do you think cashew butter would work in place of the raw cashews?!

  10. Ana_IloveTdP

    Hola!
I like your sauce!! But I have never heard of nutricional yeast… I love cashews!

  11. Elise (Post author)

yeah, but i wouldn’t make a direct substitution – probably 1/4 cup cashew butter.

  12. Elise (Post author)

its a flaky powder thats a good source of B12 for vegans and it tastes semi-cheesy. you can find it in many health food stores or online.

  13. Katie @ Peace Love & Oats

Ahh this looks good! Do you think it would be fine if I left out the tamari?

  14. Elise (Post author)

    for sure.

  15. Elise (Post author)

this sauce looks terrifically scrumptious – gotta give it a try and going to make my seitan again – went to WF and they did not have the Bragg’s nutitional yeast – would any other brand is good?
Thanks to your blog, i am getting mucho ideas to better eating…Thanks Elise!

  25. Elise (Post author)

any brand is fine. you can find it in the bulk bins at health foods stores or online too.

  26. Rachel

After slurping this delicious stuff straight out of my blender several times, I decided to let you know that you should probably start manufacturing it before somebody else does. Seriously.

  27. Elise (Post author)

  28. Elise (Post author)

ps i cant leave a comment on your blog but its so cute and i love the name 🙂

This looks awesome!! Do you think I can make it without Nooch? I live in a place where it’s absolutely impossible to come by (no exaggeration, I’m in East Africa!)

  30. Elise (Post author)

wow…i mean, it will still be good, but it wont quite be the same. i take it amazon doesnt ship to east africa??

  31. Amanda

Hmm….that’s actually worth looking in to! Thanks 🙂

Excuse me not knowing but what is nutritional yeast as against the everyday powdered/grain-like yeast one uses in baking? With thanks for sharing your recipes.

  33. Elise (Post author)

its different from baking yeast. nutritional yeast is often found in health foods stores, but can be bought online. try iherb.com or amazon.com

Beware of the Honey Mustard s out there as many have wheat flour. As with all ingredients, you need to check contents each time as the manufacturers get sneaky and then gluten free people have to pay the price.

Could I substitute tahini sauce for the cashews in this recipe since I know that I tolerate it on my Fodmaps diet. How much tahini sauce would I use…2/3 or 3/4 cup? Thanks

  42. Elise (Post author)

hi debbie – i answered this in the other comment you left, but heres my response again (just in case you didnt see it).

ok, so i dont think subbing tahini will be as good (or similar to my sauce at all), but if you want to try it, feel free, and let me know how it goes.
its hard for me to guess the amount because the nuts blend from whole nuts, so im not completely sure what amount will substitute. youll also need to add some extra liquid too because tahini is more thick and dense than cashews pureed with liquid. maybe start with 1/2 cup with 1-2 tbsp of extra water?
good luck and let me know how it goes 🙂

I know this post is old but I was looking at your recipe. Have you had Bitchin’ Sauce? It’s a farmer’s market favorite down here in San Diego and they are just starting to carry their stuff in Whole Foods and other health stores in SD and beyond (I think Santa Monica, but not sure). I literally put it on everything. It’s the consistency and appearance of hummus and very similar to the recipe you posted here, but it utilizes almonds instead of cashews. They have chipotle and regular flavor, and sometimes seasonal pesto, which is a real treat. Everyone who tries it is obsessed. If you find some, give it a try!

  45. Elise (Post author)

just googled the stuff and it sounds awesome . its almond based as opposed to my cashew based one so maybe ill try to make it myself.
sadly, its not available at any of the WF (or other stores) near me.

  46. Food to Fitness

    Great! Thanks for the recipe.

  47. Terri Ioannou

I think you’ll find the latest info from monash university in australi says that cashews are high fodmap.
