It’s Friday and I’m just now getting around to Monday’s food…ugh…doesn’t look promising for getting to the rest of the week in any timely manner.
A girl can dream though.
I went big for breakfast at MOPS.
I brought this banana baked oatmeal which was okay, but not as exciting as donuts.
I made my usual vegan Winter salad for lunch.
And immediately got to work on dinner.
Roasting cauliflower for Gena’s cauli and lentil salad. I’ve made it twice before now and it is SOOO good, I want to try everything in the book, but I keep going back to this one.
Miss V took an extraordinarily long nap so I set P up with some pens and made up spelling/letter games and whatnot as I cooked.
Tahini dressing – check! Lentils – check! Cauli – check! Kids up and fed – check! Ready to set off on our afternoon adventures!
It made dinner assembly easy as could be when we got home.
I doubled the dressing (per usual) because I always like more than most recipes call for. Plus leftover tahini dressing is a-ok in my book.
Instead of arugula I used kale from our garden 🙂
Toss everything together…and…

This really is one of our whole family’s favorites.
I wasn’t going to have dessert but then I caved. My will power is being tested mightily this week. Hormones, man.
This is still the same Magic bar from Nugget that I got a month ago. It keeps well in the fridge, obviously, and is humongous, so it’s pretty much the best $4 I’ve ever spent at that store.
I’ve been reading gena’s blog since forever and one of her recipes for tahini dressing legit flipped my world upside down- now i panic if i’m low on tahini! Totally awesome the fam is so happy with that dish, especially since it’s easy to prep ahead.
