Today I’m wearing my Santa socks.

I brought my usual lunch pack yesterday, but I didn’t even eat any of it!!
Ok, I did eat some of it. Like breakfast.
I had my oats, which were bulked up with puffed millet, dried cherries, chia seeds, and some of my home-made holiday spiced peanut butter leftovers.
I got the Bella Viva Orchards Bing Cherries in my Lollihop box and they got all plump and juicy from being soaked overnight. Combined with the maple and pie spices of the peanut butter…mmm…
But when it came to lunch, I ditched my own food when I saw all the vegan friendly eats that my coworkers brought in to share.
Noodles with sundried tomatoes and fresh parsley. I picked out the onions.
Then I refilled my same tupperware with yet another pasta dish.
Noodles with red sauce and sautéed collard greens. Times two.
My coworkers usually do a potluck on holidays, but I never expect to have many options (hence my pre-packed eats)…but it was AWESOME to have dishes that whet my appetite. Hooray for yummy veggie eats in the hospital!
It gets better.
Uncle Eddie’s vegan peanut butter and chocolate chip cookies. From my patient!!! Love.
