I wasn’t going to take photos of the every day eats around the house because it seemed unnecessary, but then Kevin and Beverly wouldn’t get enough credit. Beyond spoiling the kids in all the right ways, they have gotten everything that they KNOW I LOVE here for me to eat at my whim. Alter Eco coconut chocolate toffee bar, check! Daiya cheese pizza, check! Gluten free buns for burgers, check! 100 ripe avocados, check! Kombucha, check! A garden of fresh greens for the picking, check! Kettle chips, check! It’s official. Heaven.
I’m not just saying this because he’s my father in law, but Kevin is legit a master on the grill.
The kids ate like royalty while we were away – grilled salmon, steak, etc. and since we’ve returned from Chicago we’ve had halibut and rotisserie chicken. MMMM.
We had the same dish here if you want the recipe for the sundried tomato parsley sauce (it’s SO GOOD).
I did take a photo of this chopped salad because it was worth remaking.
- romaine (from the garden!)
- cucumber, diced
- bell peppers, diced
- celery, diced
- carrots, diced
- daiya cheese (LOTS)
- roasted sunflower and pumpkin seeds (I used way too much oil when I made them but it was a happy mistake)
- half an avo
- mayo + BBQ sauce + lime juice + olive oil dressing

I have never had daiya “raw” , just the shredded cheese in a salad. (Always just used for dishes where it melted) And i’m going to fix that after i next hit the grocery store!

In the past I have felt shocked at the strong emotions I felt when I was hungry and there was no food for me to eat. (fyi- I’m pretty simple, I just don’t eat meat.)
To me, having something you can eat, or not, is surprisingly emotional. Kudos to your in-laws.
OMG thank you!! P helped me pick them out when we were in hawaii – i think they are from the quicksilver store? He told me I had to get them “because they are so fashion”. Uhhh, done!
