Hi July

July is off to a great start!  The kids and I have ben having a blast together.

They made these sea creatures and then we painted an old Costco box to be the ocean.

FYI, you can save egg cartons for painting by putting water in the middle and the different colors in the egg holes.

It’s a jellyfish and a lobster!  Naturally.

I thought this would be a one and done kind of activity, but we ended up milking it for several days and it’s still in the backyard so that was a pleasant surprise.

Our friends are out of town, but we have been using their pool while they are gone. With more friends, ha!

And eating their peaches.  It’s good to have good friends.  😉

They don’t really understand how to use these push up popsicles.  You’d think it would be worth figuring out, since HELLO POPSICLES, but they were so frustrated they almost gave up.

They are surprisingly anti cold stuff.  Both of them are so susceptible to temperatures – they don’t like anything too hot or cold (and their range is VERY narrow).  Anytime they’ve had ice cream or fro yo, they’ve been over it after a few bites (or they request to microwave it!).  And half the time I serve them hot food, they act as if I’ve set a bowl of fire in front of them!   And it’s not just food!  They want tepid baths!  Weird children.

World Cup fever up in here!  Who are you rooting for??  So many of my faves are out.  🙁

After Friday Stroller Strides they all made “nature soup” with whatever leaves and flowers they could find.  And then we went to a real cooking class right after.

Where we read “Dragon Love Tacos” (a favorite of ours already) and they made…you guessed it…TACOS!

Including masa flour corn tortillas from scratch.

And beans and guacamole.  And NOT spicy salsa.  😛

I froze coins in a block of ice and gave them some tools to hack it out.  The sun helped a lot, but it still took them an hour or so.

Hot tub “pool” is still going strong!

FIRST DAY OF CAMP!

Both kids are attending and I’m volunteering all week too, so we are all completely exhausted.

But I won’t leave you without a recipe 🙂

I made this for the 4th of July potluck we went to…which had another GF person besides me so I went all out on my dish.  🙂

Tahini Miso Sauce

Ingredients:

  • 1/2 cup tahini
  • 1/3 cup water
  • 1/4 cup tamari
  • 1/4 cup white miso paste

Directions:

Mix everything together.

Noodle Salad

Ingredients:

  • 1 lb rice noodles
  • 1 tsp sesame oil + 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 3-4 cups shredded cabbage
  • 1 cup shredded carrots
  • 3 tbsp cilantro leaves
  • 1/4 cup crushed roasted almonds

Directions:

Boil water and cook the rice noodles until they are soft and then strain with cold water and add to a large mixing bowl.  Immediately toss with the oils so the noodles are coated and won’t clump together.

Add sliced veggies (cabbage, bell peppers, carrots) and toss with dressing.

Top with cilantro and crushed nuts.

YUMS!

    I saw another blogger (naptimekitchen) who had the same issue with her kids and push pops. She used binder clips on the bottom and moved it up and the kids are. Worked for her!!

    Hey elise, looks like you are having a great summer (: Those noodles look delish as well! I’ve been unimpressed with the Tahini brands I’ve purchased lately. Do you have a suggestion? Maybe something I can get on Thrive (I live in WV so there are very limited health food stores). I appreciate it

    I really like the TJs one actually! It is organic and super creamy and a good flavor without any bitterness. The other brand that rocks is Soom. I am pretty sure you can buy it online, even amazon. It’s THE BEST stuff! Good luck!
