Last week I teased you all with a post showing off my newest obsession, Gluten-Free Vegan Comfort Food by Susan O’Brien.
My comfort cravings have only intensified in the last week…
Case in point: lasagna, mac ‘n cheese, pizza. Yeah, I like this cookbook.
Some other recipes I have highlighted for April include: home-made cashew milk, amaranth breakfast bowl, cheesy spoonbread, marinated tempeh, raw cinnamon rolls, and green curry peanut sauce with spinach and red rice.
I’ve already read the entire book from cover to cover (like most people read literature). And I love it.
Given the title of the book, it should come as no surprise that all the (125) recipes are both vegan and gluten free. The variety in the book is stellar – ranging from simple to complex, with bread baking and meatball making. As a follow up to her first cookbook, this one indicates how to make tweaks for those who can’t find certain ingredients or are allergic to soy. There are a handful of tofu and tempeh recipes, but there’s also a huge assortment of whole foods based meals – soups and salads, sweet and savory breakfast fare, ethnic favorites, classic side dishes, and much much more. She discusses the GMO issue as well as why she prefers coconut sugar and maple syrup as sweeteners. And the intro section is especially helpful for GF/vegan beginners because she explains the basics of each diet and helps you get your pantry in order.
In case you couldn’t tell, I’m a fan.
Last Sunday night, Kyle and I had family dinner.
It was nice to be back in the kitchen after being sick (and uninspired) the previous days weeks.
We weren’t very hungry, so we went with the book’s Spinach Salad, which reminded me a lot of this salad and baked potato wedges.
First I made candied pecans. Organic raw pecans may be the most expensive nut in the co-op bulk bin section, so I probably should have picked walnuts instead. But these turned out delicious, so it was worth the money.
The nuts only took 12 minutes, during which I prepped the potatoes.
Nuts out, taters in, time to make the dressing.
The vinaigrette was a balsamic and dijon blend – light and simple, not overpowering the delicate flavors in the salad.
Organic and local strawberries in April…only in southern California…
All together now.
Delicious.

If I had this book I would love to make either the “falafel patties” or the “peanut butter-chocolate chip fudge”.. oh my gosh they both sound amazing! I would get so much use out of this book!
There are so many! My top ones would be the poppy seed muffins, the friend “chicken” nuggets, and the lavender lemon shortbread (YUM!!!). They all sound delicious…now I’m hungry!

Cinnamon Oat Scones. Mac and Cheese. Falafel Patties. I could go on and on and on. I usually read my cookbooks like literature when I first get them too! Boyfriend thinks I’m crazy… but never complains when I cook something new! Go figure. 🙂

So many yummy choices! I’d have to say I’m pretty intrigued by the banana and macadamia curry…I grew up eating bananas in my curry. Perhaps the fudge for dessert? Sounds like a great meal to me!

If I had this book the first thing I would make would probably be the green curry peanut sauce with spinach and red rice or french toast. Good vegan french toast is hard to come by.
A lot of the recipes look delicious! I think I’d want to try the pumpkin pizza crust! This gets me thinking, I wonder if there is a gluten free, soy free, vegan cookbook out there somewhere… Haha good thing I haven’t gone vegan because I think that may be hard. A fun challenge though. I might try it out when finals are over…

Everything in this book sounds so good! It’s hard to choose what I would make first. Breakfast is my favorite meal, so I would probably start with either the amaranth breakfast bowl or the banana buckwheat pancakes.

The spinach salad- to make it more summery I would use fresh apricots with the strawberries and toasted pine nuts! Would be perfect midnight-light-re-fuel-brain food for healthy cravings whilst writing my thesis 🙂

Putting fruit in salads is one of my favorite things and I can only imagine how heavenly that salad is considering it has avocado as well!

I’m usually more of an intuitive cook when it comes to vegan recipes, and since i love wholesome, unmasked ingredients I usually love what I end up producing. But I would really like to learn to make my own gluten-free breads, particularly the millet bread and sweet potato biscuits…millet bread from the grocery store is amazing, but it’s soo expensive
