Cleaning and grilling

This is what productive looks like.  I love a nice clean house!

Kyle and I celebrated our hard work with some grillin’.

I quick flip through this book, and the grilled tomato suns caught my eye.  The cook time was nice and speedy (we were starving).

I’d say we did a damn fine job of replicating the cookbook photo.

In the interest of getting food on the table stat, we went with store bought veggie burgers.

These ones to be exact.  You can see the ingredients below, but I’m happy to say these were much better than the original ones we previously tried.

Because they are SoL burgers, they are non-GMO and organic :)  But this flavor was without the soy, and accordingly, they didn’t have the faux meat texture.  Yea!  Patties full of veggies – just the way I like my burgers.

The almond grain Sol burgers were actually orange in color, which I found amusing.

After hulling the seeds out of the tomatoes, I sprayed them with grapeseed oil and passed off the stuff to Kyle.

Meanwhile, I got to work on the burger toppings: I sliced cheese and avocado and caramelized onions and mushrooms

His: BBQ sauce, caramelized onions and mushrooms, cheddar cheese and a veggie burger on toasted bread.

With two grilled tomato suns each.

Hers: avocado, BBQ sauce, mustard, spinach and a veggie burger on toasted bread.

So so good!

In fact, I’m not sure which was better – the burgers or the tomatoes.

    Do you know of any veggie burgers made without gluten or soy? Lol I found one once and now I can’t for the life of me remember! And I loooove tomoatoes with italian dressing and blue cheese! I’ve never tried them grilled but it sounds pretty good to me!

    but we dont have blueberry pies, a blow up pool, cute toddler or german shepherd…so theres some room for improvement.

    cleaning sucks. it’s time that kyle got you a cleaning lady. now that we have a cleaning lady i go all out to actually make our apartment as dirty as possible. that way i feel like we’re really getting our money’s worth.

    i know that veggie burger is not the only thing you ate today…

    what are you talking about, im a totally in control, eats in moderation, normal person. kidding, that burger wasnt even my entire dinner, so hells no its not all i ate that day.

    Have you tried the Dr. Praegger’s veggie burgers? I’m not sure if they have soy or are FODMAPS friendly but they are my favorite and are full of veggies! so yummy(:

    way back when (yearssss ago) those got a little too mushy on me. but maybe grilling them would improve the texture. which flavor is your fave?

    I like the California Burgers (you can get them at the Cotsco where I live). I know what you mean about being mushy, but if you have a toaster oven or even a regular oven (it would probably just take longer) I put it on broil and flip after about 9 minutes (when it gets a little brown, but you have to watch because they will burn!) and then about 7-8 minutes on the other side so that they are crispy on the outside. I usually eat them on salads so I don’t mind the texture but I think you can get them to firm up a little better on broil. Hope that helped(:
