Chocolate muffins that taste like cupcakes

A long time ago (not really but they have been long since eaten) I made these muffins using a Simple Mills mix.

I’m obsessed with this company.  The ease of baking has never been so real.  And I don’t feel yucky about it at all because every ingredient is one I have in my pantry and would use on a from-scratch muffin too.  It’s like someone asked me if I wanted an instant option for something I already make and love and then made it just for me.  Ok, enough words…here are the pics.

Add eggs, water, and (coconut) oil…don’t eat (too much of) the batter…pop in the oven…

They give you frosting recipe ideas if you want them, but I promise you won’t.  With only 7 g of sugar per cupcake muffin, these still taste like dessert without being sickening.  So.  Good.

TRY THEM ASAP!!

Really wish I had saved a few for my birthday (today).  Doh!
