Carrot glow

When the winter months start in, it’s always best to have a tanning back-up plan.  Enter carrots. 

With B-carotene, you don’t need the sunlight to get your orange glow on.

But just in case this slightly superficial side effect isn’t your thing, here’s a delicious and comforting carrot dish to (hopefully) win you over.  Good flavors are enticing to everyone, right?  Right.

Psst, it’s a slow cooker recipe, too…so that means it takes minimal effort to make. 

Faux tan + yummy food + not much work = win win win.

Soy Glazed Carrots

Ingredients:

  • 1 1/2 lb. baby carrots
  • 1/2 cup vegetable broth
  • 1/2 cup maple syrup
  • 1/4 cup water
  • 1 tbsp soy sauce
  • 1 tbsp brown rice vinegar
  • 1 tsp miso paste
  • 1/2 tsp ginger powder (or 3 chunks candied ginger, finely chopped)
  • orange zest (or 1 tbsp orange juice)
  • 2 tbsp sesame seeds

Combine everything except the carrots and sesame seeds.

Add the carrots to the soy miso glaze, then top with sesame seeds.

Set the slow cooker to low and cook it for 3 hours.

At this point, you may have a little bit of juice remaining.  You could strain the carrots or just enjoy the excess liquid…or you could put the slow cooker pot in the oven to reduce the glaze all the way.

Which is what I did. 

After 15 minutes at 400 degrees, the liquid was all gone and my lovely carrots were perfect.

Soy glazed carrots make a great side dish (perhaps with a tofu dish like this or this; or with tofu spring rolls).  But they could just as easily be the central feature of a meal.

I had them on a bed of quinoa and brown rice. 

These are salty and sweet and make me want to eat them until I turn into an oompa loompa.  It’s a good thing I only made 1 1/2 pounds worth, because otherwise I’d be the girl who polished off 6 pounds of carrots in one sitting.  And that’s not cool.  Or normal.

It should also be noted that this dish is good both warm and chilled.

    Oh yeah, I have the carrot glow, too! I always bring carrots with me to school and get mocked by my french school maids since french people would never munch carrots -without a dip, oh the horror!!! But they were oh so surprised that I did not spend my holidays at the beach but in carrot land!
