First things first, I made coconut blueberry scones yesterday, and I am really pleased with the outcome. The recipe will be up soon. Here’s a teaser…
I had three over the course of the afternoon, very much spoiling my appetite for dinner. They are friggin’ delicious.
Anyway.
I had one before work (breakfast #1). And then I brought these goods for the rest of the day.
Breakfast #2 – oats with silken tofu, raisins, and NuNaturals’ vanilla stevia.
Lunch – salad with mixed greens, shredded zucchini, carrots, red quinoa, kelp noodles, and seitan.
Snacks – trail mix with raisins, peanuts, sunflower seeds, graham cracker cereal, pumpkin seeds, and roasted almonds; apple; candied ginger; and dried apple rings
Let’s get that in zoom mode, yes?
Scone
Oats
Salad
Snack attack
Etc.
In other news, who is looking forward to this weekend’s Carmageddon? For the Southern California readers (or anyone who knows anything about LA traffic), you may appreciate this YouTube video.
For the rest of my readers wondering what the eff I’m talking about, July 15-18th will be a nightmare for anyone trying to drive anywhere on the west side of LA due to construction. The closure of massive parts of the 405 freeway essentially disconnects most of Los Angeles, including how I get to work. The hospital has been prepping for it since April. It’s being treated like a disaster. Staff is being housed and fed by the hospital because having RNs and MDs sleep over is one of the only ways to guarantee there’s any staff at all.
Uhhh…can’t wait! [sarcasm]

gah…you just reminded me that i forgot to buy candied ginger at the store AGAIN. I practically live off of that stuff at work, and it has been ever-dwindling for the past week…I finally finished it yesterday. Darn!

Those scones look tasty! A weird sounding but very delicious scone flavour is a blueberry lemon scone, just in case you plan on playing around with variations a bit. 😉

But Hitler shouldn’t be so disparaging of LA’s public transportation! I used to commute to UCLA from the southeast corner of LA County via the metro green line and bus. The metro rails are great. LA needs more of them – definitely need to hook up the west side!
