Yes bacon. Out of coconut. It’s insane. I don’t even get it but I’m going to stop trying to analyze how this magic occurred and just enjoy it.
You should too. Seriously. I would NOT be this dramatic if it was mediocre.
Coconut “Bacon” [vegan, gluten free, FODMAPs friendly]
Ingredients:
- 1 1/2 cups unsweetened coconut flakes
- 1 tbsp tamari
- 1 tbsp maple syrup
- 1 tsp sesame oil
- 1/2 tsp liquid smoke
- pinch of sea salt
Directions:
Pre-heat oven to 325 degrees F.
Mix all liquid ingredients (tamari through liquid smoke) in a mixing bowl. Add coconut flakes and stir until coconut is covered. Let it marinate for a few minutes.
Spread onto greased baking sheet or parchment paper. Make sure it’s well spread out with minimal overlapping portions.
Sprinkle with salt.
Bake for 15 minutes (at 325 degrees F). Watch carefully at the end because it can burn quickly (although those crispy burnt parts are mighty delish).
Let cool.
Try it with a baked potato, on a Caesar salad, in chocolate chip cookies in everything.
How does this turn into bacon? It’s a food miracle. Don’t argue, just try it. Then we can discuss all the recipes we can use it in. Okay?
I’m sorta dying over this stuff. In the words of RZ, it’s everything.
And now for one of the ways to inhale it (aside from straight from the baking sheet – trust me, you’ll have a hard time holding back).
Cobb Salad Lettuce Wraps [vegetarian, gluten free, FODMAPs friendly]
Ingredients:
- 1 bunch romaine leaves
- 1/2 avocado
- 2 hard boiled eggs
- 1/2 cup cooked quinoa
- 1/3 cup coconut “bacon”
Directions:
Chop the end off romaine leaving the hearts of the lettuce in tact. Set aside.
In a bowl, combine hard boiled eggs and avocado. Mash together. Add in quinoa and stir until mixed.
Scoop quinoa mixture into hearts of romaine and sprinkle coconut “bacon” on top.
This quinoa dish alone looks awesome. But then it gets so much better when you combine it with the rest of the goodies.
I know there are lots of imitation (vegan) bacon products out there, but this is truly fabulous. Crunchy. Salty. Savory. Perfection.
Don’t change a thing about this recipe. If you don’t have one of the ingredients (like liquid smoke) go buy it. Even though there’s only 1/2 tsp in the recipe, it’s essential. You’ll thank me later. Like when you’re on your 7th batch in under 48 hours.
Bacon!
And then I did this…
It’s like an Elvis sandwich but better. Because it’s vegan, gluten free, and will make your taste buds explode.
Elvis Rice Cakes [vegan, gluten free, FODMAPs friendly]
Ingredients:
- brown rice cakes (I used Lundberg Farms)
- peanut butter
- medjool dates, pitted and chopped
- coconut “bacon”
Directions:
Spread peanut butter on rice cakes.
Add chopped dates and coconut “bacon” on top.
Who would have thought this collection of ingredients would be so awesome together?
I now fully understand why people consider salty & sweet to be such a dynamic duo.
Would you believe me if I told you I ate this for both lunch and dinner on the same day? You would if you tried it, that’s for sure.
Bacon!

I am so intrigued with this recipe but I really, REALLY don’t like coconut so does this end up with any coconut flavor at all? Like even just a hint? It would be awesome to find a substitute for crispy bacon for sure!
I think this is my first time commenting on your blog. I ate vegan for about 2 years but have since added back eggs to my diet along with chicken and fish on occasion. I still eat a lot of meatless meals though and love your recipes!
Just when I think I can’t love you any more, you come up with coconut bacon. Genius. I don’t have liquid smoke. Is there anything you think I could sub for it? If I omit it, I doubt it would be as bacony.

I didn’t realise you hadn’t discovered the wonder of coconut bacon yet! It’s delicious. I love it almost as much as eggplant bacon.
And I make Elvis sandwiches out of it too, only I use banana instead of dates and oat bread instead of rice cakes. Mmmmm….now I am hungry!

Shut the front door. This is so intriguing. I don’t even like bacon, but since this contains coconut I bet I’d enjoy it. Well, I don’t really like the coconut flakes, but this looks too good to be true.
That is definitely going on the list. I love bacon, but I hate all the icky stuff that goes into.
Do you have any ideas of where I could get liquid smoke? Whole Foods?

i have to be honest, at certain points there was a little bit of a hint of coconut. the really crispy pieces had no coconut flavor at all, but every once in a while i could taste some.
that said, if i didnt know if was coconut, i really dont think i ever would have figured it out.
nope. do yourself a favor and go get liquid smoke. promise youll thank me.

So I made it this evening:) Didnt have the liquid smoke (you can totally buy it on line) but used a little bit of BBQ sauce instead and it worked a dream. I had to banned myself from the kitchen to stop eating it. Also slightly over salted mine, but will learn for the future:)
haha! clever use of BBQ sauce. its so hard to stop snacking on it!!!

Oh boy, these are in the oven right now and I’m super excited. I have been hanging out to make this and yesterday I went and bought all the ingredients to make the bacon and the romaine wraps, they look sooooo good! It remains to be seen whether there will be any bacon left for my husband when he gets home in 4 hours! The coconut flakes are really expensive here but I found some online in bulk which I might get, but they are 5kg bags… I suspect I would use the whole lot just making this recipe!! 😀

This looks phenomenal. I am wishing I wasn’t at work right now just so I could make it. Have you tried baking with it? If you DID want to put it in chocolate chip cookies, would you bake it as bacon first, then add to the dough or add to the dough and bake everything at once?
yeah, id make it into bacon first and then use it in the dough.

I just made these bacon chips. I was super skeptical and when they came out of the oven slightly burnt (you really have to keep an eye on them at the end) and soft, I had no idea what to expect. But, wow! These are sooo good! I can see myself making this once a week for sure and scrambling them with eggs or putting them in egg salad. I did replace the tamari with coconut aminos and the maple syrup with honey. They were delicious and thanks for sharing the recipe 🙂
