Unlike last week’s meal plan, I kept this one a bit more flexible due to the uncertainty (and chaos) on the calendar. In addition to my usual work schedule, I had a four hour class (for work) and maternity unit tour. That meant I’d be at the hospital all five days of the week. I can’t get away from the place! Kyle was also busy with work – presentations, dinner meetings, etc. Accordingly, I planned out dinners for all five week days, but didn’t assign definite nights for most of them. Instead I just figured I’d sort it out as the week went on.
These were the meals:
- rice, bean, & sausage bowl (Kyle’s request)
- leftover crock-pot stew (I had extra veggies from last week to use up)
- pasta
- personal pizzas
- gardein stir-fry
Here’s how it ended up going down.
Monday: Crock-pot stew
This was easy to do for Monday because I prepped it the night before (Sunday) and let it cook overnight. In the morning I put it in the fridge and when Kyle and I got home from work we just reheated it. Recipe here.
Tuesday: Rice, bean & sausage bowl
I was going to make pizzas this day since I was only at work for a four hour class, but I felt like crap when I got home and didn’t have the energy. This meal was much easier because I could make it in shifts (while I rested on the couch in between). Brown rice in the cooker. Tofurky sausage. Black beans from a can. Corn from the freezer. It’s that easy.
Wednesday: Gardein stir-fry
I made this on Wednesday night because Kyle had a work dinner. In the end, his thing got cancelled at the last minute (slash turned into a coffee date) so he got home late and starving. I had already polished off my meal, so he had leftovers.
Thursday: Personal pizzas
Kyle and I had our maternity orientation this night and it ended later than I thought it would. We didn’t get home until almost 8 o’clock and I was hangry. As a result, I was thisclose to skipping the planned pizza meal and getting something from WF on the way home. But in the end I decided to just suck it up. I nearly fainted waiting for the oven timer to ding.
Friday: Pasta for him / Leftovers for me
An easy brainless Friday meal. I had work so Kyle made his own dinner once he got home (he gets home over an hour before I do). Our garden is still giving us tomatoes aplenty. Plus, there was extra marinara from the pizzas we had the previous night. He made himself pasta with that stuff (plus TVP), while I threw together leftovers. The salad above was from earlier in the week and I plan to share the recipe eventually (update: see it here). Since there wasn’t too much remaining, I added seitan to it.

Breakfasts were waffles, oatmeal, scones, eggs, breakfast quiches and PB&J.
Lunches were leftovers of various dinners, chickpea salad pitas, salads, etc.

Next week will be even more up in the air since we will be staying with Kyle’s parents, celebrating Thanksgiving (twice), and much more (like going to my first NFL game!!!!). Given this, I’m not sure how much I’ll plan out. But I do have a few more recipes to share in the meantime.

Those meals looks great! I find it too hard to meal plan, we generally just look in the fridge amd see what we have. I also get hangry and need to eat but I always feel better for waiting and eating something good for me and substantial. I can’t wait for the chocolate balls recipe!
