Breakfast: toast with almond butter, banana, iced tea with almond milk
After breakfast Lynn came over to the westside and we went on a walk.
Even though I had an apple before we set out, by the time we got home I was starving. I had some leftover mac ‘n cheese, which was a little set in it’s way, until I added some plain almond milk.
That helped transform it into the ooey gooey cheesy macaroni that vegans dream of.
In truth, it reminded me a LOT of The Veggie Grill’s mac ‘n cheese, which makes sense since they use quinoa pasta and Daiya too.
After lunch I had a few errands to run. I didn’t get back home until 5 pm. I was going to do some weight work, but I kinda skipped out on it once I realized we were having manicotti for dinner. I got to work on that instead.
Vegan pasta twice in one day?!?! Lucky me. Recipe to come.
Dessert was more mocha almond fudge ice cream.
omg. I want mac n cheese NOW.
nothing like a good day of getting carb wasted. i hope you watched some reality television on netflix while you stuffed your face.
xoxo
The manicotti looks soooo good!
Oh my goodness…that mac & cheese is calling my name.
I was planning to have pasta with marinara sauce & veggie meatballs for dinner, but that alllll just changed. haha.
Nothing wrong with days full of carbs.. especially when the meals look that good 🙂 Cannot wait for the Manicotti Recipe. Looks amazing!
Oh, I didn’t know that you and Lynn are friends. Wow, I read both of your blogs religiously. Lynn’s blog is like my fantasy food world! I love seeing all the great food that she eats, especially the desserts. Alas, I have SIBO, so I am on a super super strict low carb, FODMAP diet. That’s how I initially found your blog when I was doing research on it. Also, I bought your FODMAP cookbook; it’s been really helpful, and I find that I’m finally making some improvement in my health. Thanks again for all you do! You’ve given me so much hope.
P.S. I hope that Lynn’s father’s condition improves.
How could anyone say no to this mancotti? They look fantastic! Can you share the recipe?
